I have a basic granola process that I love. I would like to mix it up more and/or give the granola more zing! And maybe lighten it for spring and summer. I mainly use the following ingredients in different combinations...but they are all starting to taste the same ...
Grain:
Rolled Oats
Oils:
Coconut
Canola
Dried Fruit:
Cranberries
Apricot
Nuts/Seeds:
Pecan
Almond
Sesame
Sunflower
Spice/Flavor:
Salt
Cinnamon
Nutmeg
Ginger
Vanilla
Sweet:
Honey
Molasses
Brown Sugar
How do you flavor your granola? What are your favorite combinations? Do you have seasonal granolas? Any other granola ideas are very welcome. Thanks!

you might lighten it by adding in some sort of puffed rice maybe..
and do a "fresh" fruit flavor.. and you could intensify the fruit flavor by using juice concentrate for some or all of your sweetner.
Let's see.. I know that someone makes an apple raspberry juice that has a nice raspberry flavor.. and then you could get some dried berries to add in with the puffed rice.. you'd probably get a nice light summery flavor that way.
you might also check out spices like Cardamom, Cloves, Allspice and lemon juice.. the lemon juice would definately give you a perky flavor..
Oh or maybe some orange zest.. like with the cranberries.

I've been making mine with apple juice and brown sugar - like Jodie suggested, I'm going to add other juices. I bet an almond/cherry combo would be nice...

I missed this and the original linked thread before...I haven't made granola in ages but I've thought about it a lot lately... From the linked thread -- I've never thought to add any grain other than rolled oats and wheat germ to granola. Might have to consider some changes. I've also never added any liquid aside from honey or maple syrup. I do cook the grains and nuts most of the way before adding the fruit. When I don't, the fruit burns.

some things that i didn't see suggested here yet that we've used successfully in granola:
applesauce or other fruit puree
flax seeds
dried apple slices, chopped, dried blueberries -- i add fruit after baking
olive oil
also i've been toying with the idea of a savory granola.... thinking soy sauce, sesame oil, sesame seeds, a bit of heat, maybe as topping for soups, or to sprinkle on top of grilled chicken or shrimp... or just to toss with salads.

Chopped dates, coconut oil, peach juice or some other fun juice, maple syrup. This is a new one I've been making: Simple Yet Delicious Granola
It's great with nothing added, too.

Me too, stef! I'm enjoying heat in all sorts of sweet or savory ways. I'm curious, though, since we most often eat our granola with milk or yogurt, will that dairy defeat the purpose of the heat?

I dont' know about heat in granola but I love mixing sour cream and hot sauce for a creamy, cool, tangy, spicy dip for quesadillas. So the milk/yogurt and heat together can be a nice mix.

if you mix it in with milk or yogurt, probably. but i was thinking of it more like a topping/sprinkle for cream soups, or grilled vegetables, or grilled chicken or fish, or in salads.... so except for cream soups (and we make ours non-dairy) the heat would still shine through.
