We're doing BFIAR here and last week we read Prayer For A Child. One of the activites we did was to make some bread. I really didn't have it in me to make a yeast bread - plus Elizabeth reminded me that quick breads are much easier . I found this recipe in my Junior League Centennial Cookbook and it was YUMMY and super easy!

Fresh Apple Bread

2 c. all purpose flour
2 tsp. baking powder
1 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. grated nutmeg
8 Tbsp. (1 stick) butter, softened
1-1/4 c. sugar
2 eggs
1-1/2 cups finely grated apple peel (I just used 1 apple)
1/2 c. chopped pecans or walnuts (I omitted this)

Preheat oven to 350 degrees. Butter and flour a 9-inch loaf pan.

Mix the dry ingredients together and set aside. Cream the butter and sugar together in a large bowl until fluffy. Beat in the eggs one at a time. Stir in the dry ingredients, then add the apple and nuts.

Bake for 1 hour or until a wooden toothpick inserted comes out clean. Cool in pan for 10 minutes, then turn out on a rack. Cool before slicing.
