I plan on making some dinners for my Dad and freezing them in individual sized portions.
Pot roast seems to be a good choice. Can I freexe the potatoes that I cook with the meat or should they stay separate, to be cooked when the pot roast is warming?

Besides pot roast and chicken catchiorre (sp?), and meatballs any other suggestions?

He a meat and potatoes kid of father. I never had spagetti and meatballs until I was in elementary school and that was because he was at a conference.

I'd omit the potatoes until reheating time. Cook it separately then combine for about 15 minutes so the potatoes absorb the flavors from the stew. Also depends on how you're cutting the potatoes. If they're rather large chunks you can just drop them into the stew and let them cook while the stew reheats.

I'm with Stef. Potatoes (and carrots) don't thaw well. They sort of turn to mush.

What about chili or some kind of mexican casserole, like enchiladas or a layered thing with tortillas, meat, cheeese? One chicken dish that freezes well is Russian chicken. (Bake chicken in a sauce made of 1 small bottle Russian dressing, 1 can jellied cranberry sauce, and 1 envelope onion soup mix. There are many variations that call for other dressing and marmalade combinations.)
