Do you have specific meal times or do your kid eat when hungry? And, how much do you "cater" to their likes and dislikes? I am thinking specifically of breakfast and lunch. I have always had a breakfast time and lunch time when everyone comes to the table and we eat together. Dinner time tends to be more flexible as my dh travels during the week and the older girls have b-ball and horse barn schedules. I now have a very fussy 4 year old who is not eating breakfast and lunch can take up to one and a half hours for the 4 and 6 year old if they don't "love" what is served. Frankly I am very concerned with having them eat and be well nourished - these are our "newly adopted" children who need to add some weight and we are headed into a New England winter (what ever that will bring) and they are not used to the cold - and I am not sure what their immune systems are like. The battle is really more about "what they want" then what they will eat. I never had any food issues with my older children so I am really not sure how to handle this and a loving and reasonable way. This "struggle" with food is not a good way to start our day and it just seems to continue into lunch. Meal times are becoming stressful instead of a nice time for our family to come together.

My kids usually eat breakfast as soon as they get up. They eat cereal. I have about 2 or 3 kinds they can choose from and that is it. Every once in a while I will make eggs and bacon or pancakes or something like that, but that is usually on the weekends. We then have snack at 10:30 - it usually their choice within reason.
Lunch is noon. Lunch they may choose from a few things. They can have -grilled cheese, hot dogs, sandwiches, bagels, soup or something else if they want to make it. They snack more often in the afternoon. usually around 2:00 and 4:00. Again they have something within reason -they have to clear it with me.
Dinner is around 6:00. I make one thing - a main dish for them to eat along with a couple of sides. I try to steer away from something I know is unpopular. for example I do not make chili anymore because I was the only one who really enjoyed it. I only make sloppy joes every once in a while as half of them like it and half do not. For dinner if they do not like it and I know that I give them a little and they have to eat it to get any dessert. If they choose not to finish they are done eating for the day.

I do not know if this helpful at all. Good luck. I might try to be a little understanding with the new kids as you are all trying to learn each others likes and dislikes.

A friend adopted a little one from China and was quite concerned about food as well. She set up a snack table on a low coffee table with things like cheerios or dried fruit on it and left it out at all times. Then if the meal wasn't a success, good food was still available in a low stress manner, if that makes sense.
She felt that it was a good solution to her worries about adequate nutrition.
