Anything that you might otherwise do with cooked chicken works just fine with turkey. To get away from the sense of Thanksgiving reruns, we do Turkey Curry.

First, we have a second Thanksgiving dinner, because we have leftovers of everything. Then, I make Turkey Enchiladas using a Six Ingredients or Less Slow Cooker recipe book. I love it. It's simple, quick, and tastes great. Here's the recipe:

2 cups cooked cubed turkey
3 cups shredded Pepper Jack cheese
1 can condensed cream of chicken soup
1/2 cup milk
6 8" flour tortillas

Combine turkey and cheese and set aside. Combine milk and soup, beat until smooth, and set aside. Place 1/2 cup or more turkey mixture on each tortilla and roll. Place, seam side down, in a sprayed or greased slow cooker. Pour soup mixture over the enchiladas covering them completely. Sprinkle remaining turkey over the top. Cook on High for 2 hours.

Makes 4 servings. I triple the recipe (but only double the cheese and sauce) for our family. The cheese makes the recipe spicy enough for me, but if you like more heat, add minced peppers. Remember, slow cookers tend to draw out spices.

I found one tonight from allrecipes.com. I am still "no dairy" so I cannot personally testify, but the kids actually liked it! I substituted peas for the green beans.

Heh. We finished the turkey tonight. ALL OF IT!

We started out with barbecued "pulled" turkey on Friday, then yesterday it was chopped up roasted turkey crisped up in the oven and served with a choice of Asian dipping sauces. Then tonight it was turkey and rice soup, similar to Chinese congee.

All gone -- yay!

We all like Turkey n Dumplings. My grandmother made her own dumplings - but I use Bisquick. Mix it with some warm broth, dump Turkey in broth and when it is boiling just drop the dumplings in. It takes no time at all, is nice on a cold day - and if you have leftovers of the dumplings, I pour it into pie shells with frozen peas and we have Chicken (Turkey) pot pies.

Now, I am not a gourmet cook. Everything I do has to be quick and easy - so I don't burn it. This might help the other less than stellar cooks.
