I hope one or more of you can help me. I am looking for a recipe for a certain dessert that I had all the time during my year spent in the mid-west involved with a retreat ministry. This is the sort of dessert that Catholic moms of the high schooler retreatants would provide for the mid-retreat snack. We literally had it served every day or two, so it must have been reeeaaallly popular in Minnesota and Wisconsin. (I had never heard of them growing up here in Virginia.) They were delicious!
So for the description:
The bars are topped with a layer of chocolate. The bottom layer, which is wonderfully chewy, is made of some breakfast cereal (was it Special K?), something like corn syrup, and maybe peanut butter, along with other things, I assume. They were cut into small squares.
Does this sound familiar to any of you? If so, please post the recipe, so I can promptly buy the ingredients for my baker-in-chief (a.k.a. 12yo dd) to make them. My mouth is watering just thinking about them. Thanks!

Is this called "Seven Layer Bars"? I think that chewy layer might involve sweetened condensed milk. The recipe I'm thinking of was from whatever company makes Eagle Sweetened Condensed Milk (Borden's?) and was in an ad in every women's magazine 20-25 years ago. I don't know that I have the recipe, but if this sounds like the one you're trying to find, I wouldn't be surprised if it would show up on a Google search.

O Henry bars?
Like Rice Krispie treats, but they melt in your mouth. Yum. (I have limited time this morning, and what do I go for? The chocolate post. It must be Friday....)
O'Henry Bars
Ingredients:
6 c Rice Krispies or Special K
1 c Corn Syrup
1 c Sugar
1 c Peanut Butter
12 oz Chocolate Chips
Heat sugar, corn syrup until it boils. Add peanut butter and stir till pb is melted. Pour in cereal and mix til coated. Press into a greased 9 x 13 pan. Cool. Melt chocolate chips & spread on cooled peanut butter mixture.
Some people do the frosting with 1/2 choc. chips and 1/2 butterscotch chips.

Irene, I can't help on giving the name of the bars, but I just had to laugh on your description. I have a dear priest friend who is from Minnesota, and he talks about (and so does the Lake Woebegone and other Minnesota stuff) about how the ladies always are making bar cookies and jello molds. Any type of function, and you will find them. There's a book that talks about this...directed towards Lutheran women, but it's really applicable to most from Minnesota (according to my friend).

Here is a recipe that sound "a litte" like what you're talking about. I haven't made them in a very long time.
Frosted Oatmeal Squares
4 cups quick oatmeal
1 cup brown sugar
1 cup softened butter
1/2 cup white corn syrup
1 small package chocolate chips
3/4 cup peanut butter
Mix thoroughly oatmeal, sugar, butter and corn syrup. Divide mixture into two 9x9 glass pans. Press evenly into dishes and cook each 3 1/2- 4 minutes in microwave until bubbly over entire top. Cool. Melt chocolate chips and peanut butter in 1 quart class bowl for 1 1/2 mintues in microwave. Mix until smooth and spread on top of oatmeal base. Store in fridge. Soften at room temp. Cut into squares.

Boy, you all are the best! What a wealth of information we have here on this forum.
I think Karen has it with her O Henry Bars. (I should have known I could depend on you, Karen. I think you and I should start a new section of the forum aimed at chocaholics. ) Stef found the exact same recipe on the page she linked to at the end. See? These things are so good that someone else remembered them and was searching for either them or something similar.
These other suggestions sound like a good dessert making rabbit trail. Dd will love it! Seven layer bars, Frosted Oatmeal Squares, etc. Mmmmmm!
By the way, Sharon, our good friend with celiac disease will love the Oatmeal Squares recipe. Her mom is always looking for good gluten free recipes, and she tolerates oatmeal just fine.
And Jenn, the Lutheran cookbook sounds hysterical. I guess much of that food crosses denominational barriers.
