We are planning on heading for the hills of Maryland this weekend. I have a few ideas for camping meals but am looking for some suggestions. What are your favorite things to make and eat when camping?

taking chicken in a marinade in a ziplock makes it real easy to pack and cook.. except for the first day.. freeze anything you can.. keeps longer and uses less ice.

if you want to cook eggs and aren't doing fried.. you can scramble them and also ziplock and freeze before leaving.

made ahead soups and stews transport easily as well and are just a quick reheat.. take uncooked refrigerator biscuits and you can cook/toast them on a roasting fork over a fire to go with a soup/stew.

cold cuts and other sandwich fixin's

I found a bean layer dip (beans, sour cream, guacamole, cheese, lettuce, olives, onions, salsa etc) transports real well in a tupperware and makes a great quick lunch with tortilla chips for dipping.

Mary Chris,

Please check the weather before you leave...it's very changeable right now, says my Weather Guru husband...he had me secure all kinds of loose yard objects for tonight.

My Boy Scout son recommends Dutch oven food (although he doesn't like fruit cobblers...???Can't think why???). His former (WV) troop stole a recipe from a Girl Scout cookbook called King of the Road Stew...in case you have access to some Girl Scout Dutch oven cookbooks (sorry, can't find it online!).

Another idea is to make foil pouches of things to cook...hobo packets, some folks call them...you can do a pouch of potatoes (Montreal Chicken seasoning is good on, well, potatoes and everything!), a pouch of chicken tenders, etc., or make pouches with chicken, veggies and all per person. Heavy duty foil works better; spray each pouch with PAM before putting things inside.

My sleep-deprived son can't remember all the ingredients for the infamous King of the Road Stew (nor can I, since I was not at summer camp!). We'll scrounge around and see what turns up. Google has not helped, so far...
