Rebecca,

I was just going through some "delicious sounding" recipes I had torn from magazines and thrown into a drawer for later . I came across a spinach lasagna one - I'm not sure if it made into the keep pile or not. If I find it, I'll scan and e-mail.

In the meantime, have you tried allrecipes.com? I love the website - and always try to make the recipes with the highest and most reviews - take a few minutes to read the reviews, though - people often make helpful comments on improving the recipes.

By the way - I searched and they had Quite a few spinach lasagna recipes.

Good luck.

Do you have a favorite bechamel recipe? That's how I used to start mine out. Then layer on the cheeses (mozzarella and parmesan -- I prefer it without ricotta, but if you like ricotta mix first with a couple of eggs and season with chopped parsley and salt and pepper) and sauteed spinach (in olive oil, with some onions, garlic and nutmeg if you like). The tomato sauce is optional -- either with or without is delicious. Though you may want to add other things to the saute, i.e., mushrooms, artichoke hearts, eggplant....

Another idea, if you feel up to it, is to make the pasta from scratch and put the spinach *in* it (mix up a regular batch of pasta and add cooked pureed spinach -- squeezed dry first). We used to make lovely green pasta and used it in red lasagne recipes. Very different from store-bought spinach pasta, as it's a livelier green. And the kids had so much fun rolling the dough! I miss pasta.
