Had to pass this recipe on...I am a big fan of ceviche--had lots on our honeymoon in Mexico, and I still look for it when we eat out. The folks next door make a Peruvian version that is quite nice, but here is a doable Mexican version:

Authentic Mexican Ceviche

Recipe Ingredients:

2 pounds Cubed white fish or bay scallops, raw
5 - 10 Fresh serrano or jalapeņo chiles (very hot), diced
1 Red bell pepper, diced
1 Green bell pepper, diced
1 Onion, diced
3 Ripe tomatoes, diced
1 - 2 cloves Garlic, minced
1 Large avocado, diced
1 bunch Cilantro, with stems removed and diced
1 tsp Brown sugar
2 cups Lime juice
1/2 cup Lemon juice
1 bag Tortilla chips or
1 package Saltine crackers
Pinch Salt and pepper

Recipe Instructions:

In a large bowl combine all ingredients except l/2 the avocado and cilantro. Toss gently but thoroughly, making sure all fish is coated with lemon-lime mixture. Cover and refrigerate for one to three hours, stirring occasionally. Fish should become quite white and scallops will lose translucent appearance. (Once this happens, you will know that the lemon juice has cooked the fish).

Ohhhh, THAT is my all time favorite dish!! My husband is Peruvian and his father makes THE BEST Ceviche ever! I LOVE it when he comes to visit! The recipe seems to be very different from the Mexican one- Lots more seafood like Octopus, squid and scallops and its all on lettuce instead of chips. What a great summer dish!

My grandmother made it with white fish and squid (calamari). I don't remember any crackers or bread. It was a salad. She was Italian. I love it. I'm guessing though, that this isn't something pregnant women can eat, as the fish doesn't really cook...

No, unfortunately not. I was 8 months pregnant in Peru and dying for it and they wouldn't let me touch it.
