I'm looking for a little inspiration for the main meal for the next few days. The stomach virus swept through here like a tornado starting July 4th leaving me the only one standing (thank you Lord). Tonight will be the first meal and I have Chicken Rice soup with Carrots all ready to go. I'd love to have a few ideas of the bland sort for the next few days. In other words, no fat, no spice, no dairy, etc. Thanks!

Another version of chicken and rice would be my contribution. My mother bakes a whole chicken in foil, just with Lawry's salt sprinkled on it (or just salt if you wish). Place in Pyrex pan, bake for 2-3 hours at 350 degrees. Serve with white or brown rice, cooked in broth. The chicken au jus juices/gravy is really nice. One of our comfort foods, and if you're not still standing someone else can help cook it!

I like egg drop soup when everyone is sick. This recipe is quick and easy:

4 c. broth (chicken or vegetable)
1/2 c noodles (pastina or alphabet)
1 egg, beaten
1/2 tsp. salt
2 T. grated parmesan cheese (optional)

Boil broth, sprinkle in pasta, cook until tender.
Reduce heat below boiling point, drop beaten egg in by teaspoonfuls, stirring constantly. Do not return to boil after adding egg. Makes about 5 cups. Can be doubled or tripled if necessary.

Serve with Quick biscuits w/jam or honey:
2 C. flour ( I use half white, half wheat)
1/2 tsp. salt
2 tsp. baking bowder
1/2 C. butter
2/3 cup milk (can use water if necessary)

Stir dry ingredients. Cut in butter until crumbly. Add milk. Knead ten times. Roll or pat out on a floured surface abt. 1/2 inch thick. Cut into circles with a floured glass. Bake on an ungreased cookie sheet at 425 for about 15 minutes.

My family likes them after we have been sick. We also eat them every Friday for lunch.
