Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Leonie -- this is so cool! I need to do a unit on Australia and pul in these recipes -- they sound yummy. But what is "copha"?

I think it is marketed here as "artery blocker".

Hey Leonie, are coconuts grown in Australia?

Irene - and you can't even hear my accent!

Follow the link above for copha - it has a recipe for chocolate crackles - almost standard kids' birthday party fare ( with frankfurts, sausage rolls and fairy bread. )

MacBeth, I THINK coconuts are grown in Australia - in the state of Queensland? I know, all this food is not healthy but....

OK, I got curious and found this link. Apparently there isn't any American equivalent (or British, come to that!). Scroll down and you can find a copha-free recipe for chocolate crackles, and links to a couple of places you can buy copha in the US.

How strange - copha must definitely be an Aussie thing! Thanks for the link, Kathryn.

I use lots of coconut oil. Looking at the recipes, I think regular coconut oil--which is solid at room temperature--might work. Tomorrow, I'll experiment and let you know.

Gosh, Leonie, I'd love to hear your accent .

Let me know how the coconut oil works, Elizabeth.

Re accents - I know Cindy said Luke was sometimes hard to understand ( Aussie-ism! )
