I am up to my eyeballs in the most delicious, perfectly tree-ripened mangoes today.

How would you use them up without baking or freezing?

I'm thinking mango salsa, we've had delectable mango smoothies several times now, what are your favorite ways to eat mangoes?

What would you do with a basket of mango gold?

If I hada basket of mango gold, I'd hang a hammock in a tree and sit there all day sucking every bit of sweetness I could get from there and sharing them with my six year old who is a mango-lover as well! At least this is what we did every morning when we lived in Costa Rica and had a mango tree in our back yard! Any way, have you considerd blending them without the ice and freezing the juice so you can have mango smoothies even after the season ends? I love to add chunks of mango to green salads in the summer and to put a few chucks over grilled fish. I'm thinking too that it could make a lovely chilled soup or mango butter to go on freshly baked scones...I'll see if I can find some recipes. Here is one for the gazpacho soup and anotherfor sweet mango butter. I guess you couldn't ship them to me, huh? One of the things I most miss about our mission territories is mango!

We eat them green as well -- either dipped in salt or Asian shrimp paste, or blended with ice into shakes, etc. With some honey, a pinch of salt....

Mangoes are one of two fruits (the other being bananas) I miss most from home (Philippines) -- I am not biased , we have THE BEST mangoes there -- kinda like Ataulfos but much sweeter, but not toothache-inducing sweet. And BIGGER. pic here

Yummy eaten alongside sticky rice cooked in coconut milk.
Add some hot chocolate and you're good to go, like this.

We make it into candy too. Or chutney, or jam, or pastillas -- mango-milk candy.

The hit of our party last Christmas was mango sorbet -- I know, you said no freezing, but luscious mangoes, with a bit of sugar, a bit of lime, some Tequila if you want, then pureed and frozen -- heavenly.

Could you send some our way?   

Oooh, and I almost forgot -- two of my favorite salads:

Honey-Mustard Grilled Chicken Salad with Mango "Mayonnaise"

Spinach, Shrimp and Mango Salad

You could do mango yogurt or mango icecream.
Maybe you could try drying them or making fruit leather out of them to save some of that yumminess for later in the season?
Any way you can can them?
Any way you can mail them to Alaska?

I could've written this. I miss mangoes too. As to the best mangoes, well, Dominican mangoes are yummy. I hope they have some left when I go there next week.

Jennifer, I didn't know they grew mangoes in Florida. I like to make mango drinks. I just mix the mango with water and ice and put it in the blender with some sugar if needed. Blend and garnish with a sprig of mint.

Mmmmm...these ideas should keep us happily eating mangoes for good long while!

We've been having mango smoothies for breakfast - Marianna tossed a few blueberries in this morning, delicious! - but the sticky coconut rice and hot chocolate post had me drooling on the keyboard. I really like a Green Mango Salad, Stef, I picked up the recipe our first year in Florida. I think it is called Goi Du Du but it has a lime, sugar, fish sauce dressing over julienned carrots and mangoes. Add a hot pepper, thin sliced, and a handful of cilantro over the top and let it stand for awhile before eating. Yum! Unfortunately these mangoes are at the golden, not green, stage. Well, it is not unfortunate, it's rather delicious actually!

It is after 5 o'clock here, I'm thinking that mango margarita sounds delightful, Theresa!

Colleen, I couldn't get your links to work, but mango butter sounds unusual, and the Gazpacho - very cool!

Natalia, I'm certain you'll get a mango next week in the D.R. We have cruising friends who were to take out for the Bahamas tomorrow and end up in the Dominican Republic by Christmas but their transmission cable slipped and snapped two days ago when they were coming into their slip. At least it happened here, and not out in the middle of nowhere. They are on a trawler so are very reliant on their engine. Makes me happy to be on our blow boat!

I wish I could ship mangoes out to everyone, especially Lisa, you must try a mango soon!!!

FRESH!! With my 1st daughter, i was pregnant in the summer and mangoes were cheap in my hometown. We would buy cases of them and and scarf them all down. Mmmm....so good. I havent had mangoes in a couple years now. I miss them. We use to eat them every summer growing up. Here, it's just so expensive but i might just splurge and buy some for myself.

Mango quesadillas...

Place peeled/sliced mangoes onto flour tortilla along with slices of brie cheese, chopped green onion, and chopped cilantro. Top with another tortilla and grill outdoors or on stovetop.
