We are organizing breakfast for the Newman House on Sunday....thinking we will be feeding about 120-150 students. Actually it is a meal at 1:30 after Mass, but the kids have specifically requested breakfast...pancakes and other comfort foods. Would you share your favorite breakfast comfort food recipes with me...I am stuck at pancakes and eggs and cinnamon rolls...Recipes that feed a lot would be great!

Here is a recipe for a huge batch (7 pans) of the best cinnamon rolls ever!Cinnamon Rolls
I made them for our crowd at easter and they were a big hit.

Quick and easy. And VERY VERY tasty (my mother actually asked for the recipe--they were THAT good)

You can also substitute regular milk and some butter for the heavy cream...

I agree with biscuits and gravy. We usually make more than needed and freeze leftovers for later. It is the number 1 breakfast comfort food here. I'll also add in here that we actually use ground turkey in our gravy.

How about bacon & sausage? Egg sandwich variations (bacon, sausage, cheese, on bagel, on biscuit, on English muffin, etc.)?

Doughnuts and muffins? I have fond childhood memories of getting doughnuts and juice after Sunday Mass.

Banana and zucchini breads w/butter? Bagels w/butter or cream cheese? English muffins w/butter and jam? I loved Eng. muffins w/butter and jam as a child.

Belgian Waffles, maybe? I remember at least one college cafeteria I visited having waffle irons set up with batter to the side. Folks made and topped their own waffles.

Maybe crepes would appeal? I don't know whether anyone considers them comfort food, but you can make them well in advance, freeze, and thaw.

Does your target audience have any suggestions?

Sounds like you need a potato recipe in there. I have a good hashbrown casserole but I bet you could find a crowd-size recipe online. What about a meat? Sausage or bacon?

Btw I don't get the biscuits with gravy combo! To me, biscuits are sweet things that you dip in your tea and gravy is nice thick sauce you have with roast meat. I think I must be missing something...

LOL, Elizabeth! The biscuits we're mentioning are not sweet. American biscuits look likethis. UK biscuits are American cookies.

Oh my goodness, I should have had dinner before checking in here! all I want now are biscuits and gravy and cinnamon rolls!

Thank you so much! I am putting it all together tonight so I know what and when to start it all. Sam's Club donated $600 worth of food today and told us we could come back for more! They were incredibly generous. We went in there, they told us to go do our shopping, we checked out and they said you didn't buy enough, go speed shop...went again and they said, you still didn't buy enough....we'll make arrangements for you to come back when you need more!!! And all our groceries we came away with can make these recipes so we are good to go! Thanks so much!

Yesterday they gave $12,000 to the Salvation Army which has some type of food/aid station on campus too.

I have just had my dinner, so now I can tackle this thread.
Those biscuits look soo easy! I would love to make my own!

Something fun that you can do is like an omelette pizza:

Crust:

1 package (24 oz) frozen shredded hash brown, thawed and broken apart
1 egg, beaten
salt and pepper

Egg Topping:

7 eggs
½ cup milk
salt and pepper
1 cup chopped ham (or bacon)
½ cup sliced mushrooms
¼ cup sliced green onions
¼ cup chopped green bell pepper
1 ½ cup grated cheddar cheese

Preheat oven to 400 degrees. Cover large round stone w/ parchment paper. Combine crust ingredients together in batter bowl and mix well. Spread mixture on baking stone and pat down with the back of a spoon. Bake 10-20 minutes, or until golden and remove from the oven.

For egg mixture, combine eggs and milk in a bowl and microwave on high for 3 minutes, stir. Microwave for an additional 3 minutes, stir. Spread eggs evenly over crust, and top with ham, peppers, onions, and mushrooms. Grate cheese over the top and return to the oven. Bake for 10 minutes. To serve, slice with pizza cutter.

Just adding choc.chips to banana bread would be yummy!

Also, a layered egg, chopped ham,bread,cheesy thingy would be yummy. I used to have a recipe for this from a Montessori school I worked at. The cook would bake it in a huge cake/cookie like pan, adding in mustard powder and milk. Sorry I don't have an exact recipe!

I too think it's wonderful what you are doing!
