No Bake Energy Bites
I found this recipe via the Money Saving Mom blog, and it has become a hit at my house. I keep an open pan in the freezer for easy access- they don't last long.
The neat thing about this recipe is it can be anything-free and still taste good. You can make it gluten-free, peanut-free, dairy-free- whatever.
I made my latest batch with sesame seeds, peanut butter, wheat germ, flax seed and mini chocolate chips. It's a great recipe to use up stuff. (I ground my flax seeds in my Vitamix). You can eat them frozen, but they also travel well. Yesterday we threw a container in the cooler and took them hiking with us.
ETA: chilling the dough for 30 minutes helps when rolling them, or dip your hands in water instead every few balls to help them form. If you have any leftover mix that won't form a ball, it makes an excellent topping for yogurt or ice cream.

We LOVE these! There is always a loud cheer heard at our house when these are made. Easy for kiddos to make, too. I can eat the crumbles like cereal in a bowl with milk....

What is your favorite concoction?
I am planning to stock pile these in the freezer for the coming school year. My kids really like them, and they are grab and go- great for in the car.
I also like that they are brain food... not just a bunch of carbs.

My favorite concoction is whatever I can find in the pantry, fused together with honey and peanut butter! Raisins or some other bits of dried fruit are yummy in there, and coconut HAS to be in there - there is no substituting for that.

I would bet these would be even better if you toast the oatmeal and coconut first.

We make these, too. I keep them in the freezer and pull them out to thaw for 5-10 minutes before eating. It's a great frozen snack in the summer! And given the healthy ingredients, I may or may not have served them for breakfast a few times.

We have just discovered energy bites!! We have nut allergies so have experimented. Today we made some with crispy rice cereal, Trader Joe's cookie butter, honey, chia seed. My next one will be TJ's sunflower seed butter, honey, chia seed,coconut, oats and crisped rice cereal.
(chia is my other new discovery - I add it to smoothies, granola etc)

I have another great snack find. I saw this on Charlotte's blog, Waltzing Matilda, and knew I had to try it.
It's chocolate banana ice cream.
Basically, you put two frozen bananas, 2 tbs of cocoa powder (more or less to taste) and 1-2 tbs of nut butter (I use peanut butter, but I am sure that sunflower seed butter would also work) into your food processor.
Process until it all is smooth and creamy. It will turn to ice cream consistency, and by golly- it really is just like eating ice cream!
I am in heaven...
It is so good- I could eat it every day. The above recipe makes enough to serve three. You can also freeze it and then just let it thaw a bit before eating. My dc really enjoy it also. There is panic in the house when we run our of frozen bananas

I'm trying these today. I notice that the first ingredient is oatmeal, not oats. Do you cook up some oatmeal first to make these?

Use dry/uncooked oats. If you scroll down, in one of the pictures she shows a cup of uncooked oats for the ingredients. Did you try them?
