I searched and searched here, but I can't find any posts regarding this topic. I'm sure they're here! There's a recent change in our budget, so I'm looking for ideas on frugal meals that are nutritious. We don't eat red meat.

Beans.. yep the classic cheap food. But there's lots of types of dried beans. But especially, for us, the savings is in how we make them.
I make a HUGE batch and either stick in the fridge or freezer, so that I have them on hand ready to use. Sure you can do rice and beans or bean burritos or tostadas(corn tortillas are cheaper than flour) but also, you can make meatless chili with them, tons of soups, pasta dishes with beans..

I don't know if chicken broth has been recommended, but it's a great way to get a second meal out of a chicken and it's so healthy!

Recipe for Rivvle Soup, from my G-ma, who made this quite often for her family of eleven during the Depression:
Boil until tender in several cups salted water:
Diced Potatoes
Chopped Onion
(we sometimes add garlic powder and parsley or chives, but not necessary)
Make drop noodles:
Approx. 4-6 eggs
Approx. 1/2 c. flour per egg (we never, ever measure)
Mix with a fork into a wet batter, gradually adding flour until batter forms loosely on a spoon or fork.
(you can also add salt and seasonings like garlic and parsley to the drop noodles if you like)
Drop by small spoonfuls or forkfuls (a spoon makes plumper dense "noodles"; a fork makes shaggy, thinner ones) into boiling potato/onion broth and let simmer for 10-15 min. until drop noodles lighten in color and are cooked through (they will increase in size as they cook).(you can also add butter to the broth, but again, it's not necessary ~ although it's the favorite ingred. of certain family members)
A surprisingly tasty soup using just four main ingredients: potato, onion, eggs and flour. This is a family comfort food, often requested when someone feels under the weather. One ds is our official Rivvle Soup maker, renamed "Brotherhood Brand Brivvle Broup"!

Make your own microwave popcorn. Mix it up with seasonings, chocolate chips, parmesan cheese, chili powder, etc.
