Okay....we are closing in on Christmas....I bet a lot of our menus reflect that, right?
Monday--Spaghetti, homemade sauce in the crock pot since I have an appt later in the afternoon....the longer it cooks the better it tastes!
Tuesday--Ham, mashed potatoes, green beans and baked bread from Costco’s
Wednesday--leftovers
Thursday--meatloaf, sweet potato casserole, salad
Friday--Navy bean soup. I made that for the first time last week, my kids have so many bean allergies, I was a little nervous to try navy bean, but alas! They LOVED it!! Woohoo!!! With food allergies, it is always a victory when we try new food, and everyone loves it. And oh my goodness, it is so cheap cooking with the raw beans. This is definitely a weekly staple now.
Saturday--Hummmm....I’m not that far yet. Possibly pizza, because I have a feeling Saturday will be spent getting Christmas things tidied up.
Sunday--ditto above.

I don't have a week's plan yet but tonight is Mexican Monday so we're having chicken fajitas.

I love your weekly menu posts, 4ladsmom! I really look forward to them...even though I don't always have time to post and share.
This is an Ember Week, so my menu this week has a lot of meatless on it, which is, frankly, always a challenge with boys! My girls and I would be content to have a big caesar salad or popcorn for dinner...all week ...but those fellas! They NEED MORE! So, it was challenging to come up with this week's menus! I sat down with my planner last night and here's what I came up with:
MONDAY: (Some kind of throw-in-leftovers-casserole) Pasta, shredded rotisserie chicken, bacon, and cheddar cheese...maybe even some broccoli florets.
TUESDAY: Burgers in lettuce wraps
EMBER WEDNESDAY: Spinach lasagna
THURSDAY: Mexican Lime Chicken with Guacamole
EMBER FRIDAY: Scrambled eggs with cheese and onions, cheesy grits, fruit salad
EMBER SATURDAY: Loaded baked potatoes with: butter, cheddar cheese, broccoli, sour cream, and caesar salad

Oh yes....that is a big deal here. Navigating intense food allergies means a LOT of meat...and cooked veggies....not a lot of beans, lentils, no dairy, so no cheeses...so, the menfolk in this house eat a lot like Pa in Little House on the Prairie...now, if I could just get a smokehouse with some bear or deer meat, we’d be set!!! We DO like popcorn as well!

Well, we're going to have prime rib for Christmas so I probably need to cook one of the hams or turkeys in the freezer (it's a bit crowded) this week.
And I need to cook a big pot of beans.
We do have a Christmas party on Wednesday that will feed us dinner (pizza) so that's taken care of.
