Frugal this week...lots of hamburger!

Monday--Hamburger and Vegetable Soup

Tuesday--Spaghetti

Wednesday--Leftovers

Thursday--Meatloaf, potatoes, green beans

Friday--Some kind of Vegan Soup

Saturday--Tacos

Sunday--Roast, potatoes au gratin-dairy free recipe I want to try, along with celery, onions and carrots in pot with roast.

M - pork roast that was marked down at the grocery store with spinach salad and red potatoes

T & W - shredded chicken sandwiches with fruit salad

That's as far as I've made it so far. Later in the week we'll probably have taco salad and I'll likely make a chicken noodle soup with the leftover chicken, but it depends how the week goes.

This is so helpful- gets me around to making a menu!

Monday~ Borscht
Tuesday~ Dal and rice and some kind of veggie
Wednesday~ Coconut Red Curry with mixed veggies and rice/bread
Thursday~ Tofu nut loaf, mashed potatoes, peas
Friday~ hmmmm, something with sweet potatoes in there!

Haven't figured out Saturday- we may do waffles and fruit sauce.

Spaghetti (with venison burger) tonight if I can figure out how to make sauce from canned tomatoes. I'm not sure for the rest of the week. We have been eating a lot of duck which doesn't taste too bad. Of course you usually can't go wrong when you wrap it in bacon.

We used wild turkey last night and made it into taco salad. We are living off wild game at the moment. I really need to plan a trip to the grocery store! Actually I really need to plan some meals out BEFORE I go to the grocery store! I'm sure I'll find ideas here.

I think I am going to switch our tacos from Saturday to Thursday....to fit the Feast of Our Lady of Guadalupe!! I might even make a cake that day, with Our Lady’s help! This keeps me on my toes!!

I haven't been able to plan very far ahead, too many people feeling under the weather, leaves me short handed.

But tomorrow is burritos with the addition of carnitas (shredded pork flavored with orange juice, cumin, garlic and red pepper).

That's a good idea. I need something easy that night as we have an airport run right at 5 PM and need to have a easy meal ready for when we get back.

Mary, enchiladas are super easy to prepare ahead and since it's all cooked, you just have to heat it through when you get home.

I'm holding off until I see if all the tummies in the house are healed.. have had a bit of a bug running through the house.

I have the stuff to make lasagna, and white chicken enchiladas, and a bunch of normal stuff.. and I want to make a soup. I'm thinking maybe soup tonight.

We just got back from regional dance championships, so I'm in plan-free mode this week. So far we've had meatloaf on Monday and baked turkey cutlets yesterday. I can cook at home tonight, too (late dance class), so we'll probably have a chicken casserole and eat the leftovers tomorrow for lunch.

Hopefully I'll come up with a Guadalupe-themed meal for tomorrow!

Nancy I find burritos to be an excellent busy day mexican meal..if necessary you can wrap in foil (to stop drips and help keep it warm) and carry it with you.

Tacos for tomorrow night, plus fake fried ice cream.

Roll scoops of vanilla ice cream in crushed corn flakes... or even rice krispies
to make it super easy. Then roll in a sugar/cinnamon mixture. Then freeze.

You are done! They taste so much like the real thing
You can even melt some leftover caramels from Halloween to use as a quick caramel sauce. Or melted chocolate chips for chocolate sauce. Yum
