I've got leftover chicken. I need a recipe that is wheat, dairy, and egg free for leftovers.
Any quick ideas? I'm afraid I'll just have to heat it up and serve with rice.

Last night I had leftover chicken that I stir-fried with broccoli, almonds, and sesame seeds. I used a store-bought stir-fry sauce and served over rice. It was a throw-together meal since I hadn't previously planned anything to eat, and my family was really happy with it.
Wheat, dairy, and egg-free must really be a challenge, though!

How about homemade gravy: broth, cornstarch (?), and water. Sorry, we use flour for gravy, but are corn free due to allergies ;).
So chicken, gravy, Tinyada pasta, and peas. It was a HUGE hit with the family. Could also serve it over mashed tators rather than pasta.

Chicken tacos.. I sliced and reheated chicken with onions and sweet peppers and some cayenne pepper, cumin and oregano.. put it on corn tortillas.. you can either lightly fry them or just heat on a hot griddle.. we added typical taco toppings but those you can adjust on an individual basis too.

Thanks for the suggestions! I was thinking of the chicken tacos, but I don't think they taste as good with corn tortillas.
I ended up making rice pasta and a white wine and lemon sauce for the chicken. I used olive oil, shallots, garlic, celery, white wine, lemon juice and zest, salt and corn starch to thicken. I had some leftover au jus and chicken fat, so I added a bit of that, too.
Nothing left but some dh wanted for tomorrow, so I think it was pretty good. Only one child didn't want to eat it. But I knew that was coming.

You can toss leftover chicken into almost any pasta sauce - tomato-based (try with Kalamata olives and capers - this is normally made with tuna, but chicken works), cream based, butter/oil based (as you did...sounds yummy!)
If you like to cook with wine, you can make a sauce with Marsala that is yummy over chicken and pasta.
Chicken taco salad would be good - use tortilla chips.
Or you could do a quickie version of slow cooker salsa chicken (1 cup salsa, 1 can/equivalent rinsed black beans, 1 cup frozen corn, chunked up chicken - you would only have to cook it in the slow cooker for a couple of hours).
Now I'm hungry!
