Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

I'm wanting to make some cookies and I don't have any sugar. I have plenty of raw honey though. Can anyone tell me if I use the same amount of honey as sugar? Since that is a liquid, how do I need to adjust my recipe?

I usually use a little less honey than sugar because honey is sweeter. The dough might be a little gooier, though, so it's possible you'd need to add a little more flour.

(I know this well after the fact, but in case anyone else is interested or if you need it in the future ;) )

The substitution I found years ago - is 3/4 cup honey and subtract about 2 tbsp of liquid from your main recipe for every cup of dry sugar you would normally use. For recipes that don't have liquids I can decrease, I just toss in another bit of flour, or frankly, don't even worry about it!

Works perfect every time :)

The cookies turned out really good. The recipe called for 1 cup sugar and 2 cups flour. I used 3/4 cup honey and around an extra 1/4 cup flour. I think next time I could get away with less honey. It changed the texture of the cookies which was an excellent change.
