Can anyone recommend a frosting recipe that makes a tasty frosting that will stay stable at room temp?

I love butter cream frosting so I don't use any others if I can help it but I think the cooked frostings may be what you're looking for. Although a butter cream made with shortening only would be more stable than one made with butter. Royal Icing is stable but it's a smooth thin coat of icing like for cookies rather than a fluffy cake frosting.

I like buttercream, too, Jodie. It's easy to make and actually can be kept at room temperature for 1-2 days. It keeps about 10 days to two weeks in the frig. You do have to have room temperature that's not too warm or the butter starts to soften, so you need to have A/C during hot summer days or store it in he refrigerator.
Here's a Basic Buttercream Frosting recipe. Adding a little bit more cream will make it spread more easily.

Oh, it's been such a long time, but my mom used to make Seven Minute Frosting (or Icing) from Joy of Cooking. We lived in Houston, where everything was hot and humid. I think that was more stable because it was meringue-y, looking at the ingredients.

I myself prefer buttercream or cream cheese for taste any day...this one was okay, but never a good substitute for butter!
But if you're looking for stability, this one is pretty good!

My mom made 7 Minute in hot, humid Alabama as well.
A compromise between buttercream and Seven Minute might be a Swiss Meringue frosting.

This is the best frosting ever! Well, it's my favorite. We will decorate the cake a let it sit out up to 20 hours with no problem. It does harden some, but still taste great. I have never made it in the heat of summer.
2 lbs powdered sugar
3/4 cup crisco (generic works too)
1/8 tsp salt
1 tsp almond extract (we use vanilla instead because Ds doesn't like almond, I like both but almond is more flavorable)
1/2 c water
food coloring (if needed)
Add all ingredients slowly. Beat for 10 minutes on high. Keeps in refrigerator a long time.
If I buy Dollar General sugar (only store in our small town) I usually have to add an extra tablespoon or two of water. It will look dry and throw icing out of the bowl while mixing.
