I usually make the perfect cheescake from Simply Recipes.

An espresso one would be great too!

I did find a box of instant, and it should be ready just in time for bedtime snacks. It's not quite as good as the "real thing", but it should satisfy my crave.

Not a cheesecake, but similar in texture would be a flourless chocolate cake. They are sooo good! Cooks Illustrated has an amazing recipe with just 3-4 ingredients. I think you can sign up for a free trial. It is my go to cake when I want to impress. It *always* turns out perfectly (if you follow the directions).
