So, we are getting ready to move from Sitka, Alaska to Sylva, NC in a couple of days. Big move--will require 2 days on the ferry and approx a week (or more) on the road.
I need food ideas!
The main problem is that I need to be gluten-free, so stopping at the fast-food joint (and most convenient stores) is out.
We will have to stop at grocery stores along the way to re-fill our cooler and stock up on food.
I think I have snacks covered (veggies, hummus, corn chips, cheese), but lunches on the road are tough when you can't make a simple PBJ sandwich or even a wrap, you know?
Got any idea for lunches that are portable and gluten-free?

What about meat wraps...cheese, veggies/lettuce, dressing all rolled in a deli meat slice.

And I had no idea about the big move (again )! Have a safe and fun trip. We'll be praying for you.

Just trying to remember what we took on our road trip (3 days). We took a box of apples (lots of us ) and that took care of snacks oh and plenty of water.

For dinners we did barbies in the local parks (we tented and not all caravan parks had BBQ facilities) So we bought steaks and sausages and had simple salad makings.

For lunches I baked grain free bread prior to leaving and with ice packs it stayed fine in the esky for the three days. We packed sliced meat, cheese and tomatoes. A 1kg block of cheese in the Outback cost us $16!!!!!
What about slicing up a heap of vegie sticks and with dip and corn chips there is one lunch. That's what I did for a recent all day out lunch.

Tuna in olive oil or sardines would be fairly easy protein with celery or sliced cucumber "crackers."

We do wraps like Mary suggested, too.

Peanutbutter with apples, celery, and carrots can make a meal.

Clementines are nice on the road.

You could also boil eggs to take for the first couple of days.

Yogurt

We mostly take a hodge podge of things that are snacks and just eat more of it for meals.

We've also packed beans, rice, grated cheese, and corn tortillas for cold bean burritos.

Seven layer dip packs well, too, for a meal with the chips.

What about some good quality protein powder that you could mix with milk or water when you stop?

We have gotten the Miracle Whey and Pure Power Whey before from Dr. Mercola. Both taste really, really good!

I am sure their are other great brands out there as well.

Was thinking, as you are only gluten free not grain, you could buy rice or corn thins and top with cheese and tomato.

If you do a search on restaurants that serve gluten-free foods, there might be some on your route. We live near Wegmans where you can by lots of GF foods, all clearly labeled or on their own shelves. I'm very sure that they are careful about cross-contamination of their GF and nonGF foods.

By they way, model magic is GF. Don't know if that's any use to you, but that your kids might like to play with it on the road.

My dad is able to eat almost anywhere. I know at Wendy's, he can have the chili and potato and garden salad. Most sit-down restaurants have servers who know which items you can eat. Some (like Chili's) even have a GF menu. You can still make sandwiches if you buy GF bread, but you need to keep it cold because it molds over quickly. Corn tortillas are also a great option.

Are lunches going to be as you drive, or stopping somewhere to eat (roadside picnic or something)?

I always think the lunch in parts: protein, starch, veggie and/or fruit. Protein is the biggest hurdle to be portable. Since you can do dairy and egg, it sure makes it easier to me.

If you can bring some bowls and utensils, you might be able to do some healthier foods.

Protein:
Cottage cheese
Baby bell or cheese sticks
spreadable cheese (to put on corn chips)
hummus (you already mentioned)
Some kind of nut butter (slather on a banana or eat on spoon. Our family called that "Peanut butter spoon")
Gluten free deli meat (is it Hormel) in the packages? We use that often for the lunches. Mary's idea of a deli wrap is good. My son likes to roll up his pretzels or chips inside
Tuna fish -- there are little bags one serving size that are super convenient and not messy. You could eat out of the bag, or mix together a little salad for yourself.
Larabars

With those options, you could put these on a bed of lettuce or other veggie, add fruits.

Starch:
Gluten free pretzels
Corn Chips
Gluten Free bread (Udi or other brand)

Not sure what your route, but if you could hit some of the bigger grocery stores that have known gluten free items (Trader Joe's, Harris Teeter, Wegmans on this coast to name a few) you could keep replenishing. And some stores have ready-made foods or salad bars that might do well in the cooler for lunchtime.

We're wheat free here, so I know it's different with the contamination, but in fast food world I order a double hamburger with all the trimmings, and the meat patties become the outside "bun".

I found a bunch of recipe for gluten free homemade tortillas, when I Googled it. If you have time to throw together a batch, that would be a great on-the-go bread product. I have been using tortillas for wraps a lot when I've had spur of the moment errands the last couple of weeks. They even work great for breakfast too, just have some hard-boiled eggs on hand like someone suggested, and wrap some egg and cheese in a tortilla, throw in a fruit or veggie on the side, and maybe a yogurt, and you have a great rounded meal. I actually made a quick wrap that got me a few funny looks the other day, but it was fast and easy before I took the kids down to fish in the pond, which they'd been begging for. I spread some bean dip in a tortilla, threw in some spring mix lettuce, then a string cheese, and wrapped it up, and had a great pick me up. I thought it was yummy.

We'll be praying for a safe and enjoyable trip for you guys, and for an easy time settling in!
