Why did I not know this?
You can take your muffin batter and turn it into little muffin cookies. Treat the batter like cookie dough and drop by heaping teaspoonfuls on a cookie sheet. Then bake for a reduced time... 7-8 minutes.
These look like a cross between a cookie and a mini scone. But they are perfect for snacking! You can use all your healthy muffin recipes, and the kids think they are having cookies. Win win!

Brilliant! To save time I often bake the muffin recipe in a 9 x13 pan and serve as if it's cake, you just have to be careful about getting that center baked all the way.
Great idea on the cookies! They would eat'em in a heartbeat!

I just did it! The date-nut ones are delish and the cranberry-orange are still too hot to try. The little guy is scarfing them down like nobody's business .

My son, the only one who bakes in the house, did this with a brownie mix that I had. Everyone loved them.....but who is going to complain about brownies no matter what the shape????
