I couldn't find a thread like this on here so I thought I would start one. My favorite thing about winter is that it is the perfect time to makes soups, stews and chilis. I would love to hear your favorite recipes!!!

I love, love, love making soups and stews! I have a love affair with my crockpot
Here's a family favorite - Italian Sausage Soup
(I vary things a lot and tend to just throw stuff in, so my measurements aren't exact)
1lb Italian sausage
1 onion
Sliced carrots
Sliced zucchini
1 can kidney beans
1 can great northern or white beans
Diced tomatoes (canned or fresh works)
Beef stock (as needed - usually about 4 cups)
Seasonings - sea salt, pepper, garlic powder, basil and oregano to taste
I have varied this recipe a lot, using more or less of the different items. You can also omit things entirely, and add others (I've done no beans, and more meat, or different veggies). I just throw it all in the crockpot and let it simmer.

Oh, how timely! It's freezing here and this is on my menu:
White Chicken Chili
2 cans of white beans (I like Cannellini)
1 chicken cooked and cut up, off the bone (Rotisserie chicken is FANTASTIC in this!...or...you could just use 4 chicken breasts cooked and cut up)
1 large onion, sauteed in olive oil
4 - 8 cloves of garlic (depending on your taste - I saute' mine with my onions, but you could also mince and toss with the onions)
1 quart of chicken stock (or 1 large carton of chicken stock if you don't have homemade)
1 1/2 tsp cumin
1 1/2 tsp oregano
1 - 1 1/2 tsp cilantro
1 1/2 tsp good sea salt
1 package of frozen sweet corn
sour cream (to taste)
Kerrygold cheese
Cook and cut up chicken. While chicken is cooking, saute onions and garlic in olive oil. Add chicken stock, beans, chicken, corn. Bring to a boil. Add spices and simmer for about an hour. DO NOT SKIP THIS STEP: taste soup!! I often add salt and more oregano, but taste and season to your family's taste! Just before serving, stir in some sour cream for richness. Our family likes about 3/4 cup. Serve in a large bowl and top with a bit of sour cream and a big handful of shredded Kerrygold cheese (this is expensive cheese, but it COMPLETELY MAKES this chili, and is worth the splurge!!). If you have fresh cilantro, a little chopped on top is wonderful! You can thicken with a little flour if you prefer a thicker soup. The soup will be chunky and creamy with little flecks of sweet corn - it's delicious on a cold day!!!!
Bring bowl of white chili in front of fire. Pour a nice glass of white wine (a good Sauvignon Blanc is perfect and fresh with this creamy, rich soup!) Put feet up. Dip spoon in. Breathe sigh of happiness!

I usually double this. It is very yummy and fast!
White Turkey Chili
INGREDIENTS:
2 cans white beans including liquid
3 cups chicken stock
1 clove garlic, minced
1 Tablespoon olive oil
2 green poblano chili, seeds
removed; finely chopped
1 medium onion, chopped
1 pound ground turkey
1 teaspoon ground cumin
1 teaspoon dried oregano
1/4 teaspoon red chili powder
1 teaspoon salt
½ teaspoon black pepper
1 1/2 cups Monterey Jack cheese,
shredded
1/3 cup cilantro or parsley, chopped
1 avocado, pit removed and sliced
3 carrots, peeled and cut into sticks
1 bell pepper (any color), seeds and
stem removed and cut into long
slices
½ head romaine lettuce (inner leaves),
chopped
¼ cup pantry dressing
Combine beans, stock, garlic in a large stock pot and bring to a boil. Reduce heat and simmer for 10 minutes.
Heat olive oil in a skillet on medium heat. Add green chili and onions; sautéing until tender. Add turkey and brown until no longer pink. Add cumin, oregano and red chili powder. Pour into bean mixture. Salt to taste, simmering for 10 minutes more
Top with a pinch of black pepper and shredded cheese. Garnish with cilantro or parsley and avocado slices. Serve with veggie sticks and simple salad with pantry dressing.
Serves 4

These sound so good! I'm getting hungry, but it's way too late at night to cook.
Does anyone have a crockpot chili recipe that's fairly simple? I'm not "gifted" in the kitchen, so the simpler, the better.

here's my crockpot chili recipe:
1lb ground beef, browned
2 cans kidney beans
1 can diced tomatoes
1 medium onion, diced
2-3 stalks celery, diced
1 orange or red bell pepper, diced
Beef broth as needed for consistency
Chili powder, cumin, basil, salt and pepper to taste
Brown the ground beef. Chop veggies, and throw everything in the crockpot. Season to taste. Cook on low 8-10 hours.
I think that's all I put in... I'm typing it from memory :). I go pretty heavy on the chili powder and cumin. You could add something more if you like spicy. I make it fairly mild. Yum!

We love White Bean Chili (my recipe is different, but similar to that above) and here is a recipe we recently tried that was a big hit. I'd never tried my own Chicken Tortilla Soup. It also called for a cup of corn, but I'm not fond of corn in soups so left it out. But you could add if desired.
Chicken Tortilla Soup
1 small onion, chopped
3 cloves garlic, minced
1 T. olive oil
2 t. chili powder
1 t. dried oregano
1 (28 ounce) can crushed tomatoes
1 can condensed chicken broth (or I substitute a couple cubes of boullion)
1 1/4 c. water
1 (4 ounce) can chopped green chile peppers
1 (15 ounce) can black beans, rinsed and drained
1/4 cup chopped fresh cilantro
2 boneless chicken breast halves, cooked and cubed
For toppings:
crushed tortilla chips
sliced avocado
shredded cheese
Directions
In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
Stir in chiles, beans, cilantro, and chicken. Simmer for 30 minutes.
Provide toppings at table for soup if desired.

One of the family's favorite meals here is polish sausage, mashed potatoes and cooked carrots (some of us also like the sauerkraut).. so..
I made a very basic potato soup (potato cooked in just enough water, salt, pepper, butter and once the potatoes were cooked without draining I added condensed milk) except I also cooked carrotes in with it.. and then after frying the sausage to extract some of the fat.. I added the sausage into it. It came out wonderful.. very easy.. only took as long as it takes to cook the potatoes.. and as long as I spoke of it properly the kids loved it.. when I called it potato soup with sausage I got lots of "ugh"s.. when I called it polish sausage soup.. all in the advertising
oh and the best part is that I could do this with lots of potatoes and carrots and only a pound of the sausage when if I did the full meal it would take a good bit more sausage.

The Good Neighbor Cookbook
has an awesome recipe for Sweet Potato and Rice Soup
I made it yesterday for the first time... was very doubtful the whole while making it, but the finished product is terrific. The sweet potato just melts in your mouth. Everyone here loved it.
And the best thing is that peeling and cubing raw sweet potatoes gives you enough of a workout to eat as much soup as you want, guilt-free!
Also to note: this soup is dairy and wheat free. I got my copy at the library, but the current price on Amazon is under $7! Might have to splurge for this... I've tried three recipes so far; all were very good.
