Besides regular lunch meat, what are some options for meat for lunches for a teen boy? I'm thinking tuna salad sandwiches, but do you have other ideas for meat that's not "nitrite" lunchmeat?

When it comes to sandwiches, I always use leftover meats. If we had some meat or poultry the night before, I will cut or break it up, sometimes toss it with mayo or other sauce and put it on the sandwich.

Maybe try quesedillas. Corn or flour tortilla warmed up with whatever you want inside topped off with a nice melting cheese. My kids like it when I cook onions, tomatoes and cilantro to put inside their quesedillas. They love Muentser cheese and it melts really well.

Quesadillas or burritos with ground beef.
Chicken strips
shrimp-- popcorn shrimp or quick and easy to sautee frozen shrimp in a little butter and lemon and throw on a salad.
Buffalo chicken wings.

I'd vote for eggs. Lots of protein, little cost. You could just boil them hard and let him eat those WITH a sandwich, so it isn't the whole thing, but it still adds to the combined protein total.

Just a thought. No teenagers here yet...

burritos were one of the staples of my dh and his brothers.. refried beans with cooked hamburger in them and cheese.. then their mom just kept that and tortillas in the fridge.. they'd grab a tortilla and put beans down the middle and then heat it up in the microwave.

I hear you! My two boys are 13 and 9, and even the 9yo has developed The Appetite. (and my girls have not been delicate eaters, either, now that I think of it).

For us, anything protein is good. PBJs with LOTS of PB . . . eggs, esp. omelettes, which my 13yo can make . . . very thick grilled-cheese sandwiches . . . if we have a meat lunch, it's mostly just leftovers from a dinner.

I know my teen son would eat meat with every meal, but it's just not economically feasible a lot of the time, without going the hotdog/lunchmeat route on a regular basis. I will do the occasional hotdog, trying to get the highest-quality, lowest-preservative brand I can find. People fall down and thank me for hotdogs, but regularly? So I try to find other kinds of filling, protein-y things, and to supply a lot of whatever it is.

We often go the egg route, and the other ideas mentioned. Another favorite is mashed potatoes. Or baked. With assorted toppings- on both. It is astonishing how much a teenaged boy can put away!

My kids love quesadillas. We actually also make one with eggs (they call it egg pizza). I scramble eggs and mix in some cheddar. Then I put it between two tortillas and cook it with some PAM on the stove. I cut it up into pizza slices. They love it. Also, if you want something super fast, taquitos are really good and just cook for about 10 minutes (in the freezer case). Whenever I cook a large roast or a ham, I put some single servings into ziploc bags and put them in the freezer. That way if someone wants meat, we have it ready to go. We also make pizzas with leftover meat and veggies. I put a little cheese and toppings onto a tortilla and bake it in the oven. The kids love that.

My son makes pizza bagels a lot. Just spread some leftover tomato sauce and shredded mozzarella on a bagel and toast it in the toaster oven. yum.
