I was not sure to post this in the nature area or here
our ds15 Wise owl is going to be collecting birch sap soon . He has heard from our eldest ds that birch beer was known to be quite good and at one time very common here in Canada . well of course ds15 is hoping he could try making this beer . it seems spring is his time of yr. for extreme inspiartion as last yr. it was a clay oven he was working on ( we do wish he did not try and make it in the middle of the living room ! )
so have any of you had experince or even heard of making birch beer ? We would appreciate any help & tips on how to go about brewing birch beer . I imagine we make sap into syrup first but from there I haven't a lcue . I don't drink alcohol so I'd be happy with pancakes & syurp

The only birch beer I've had is non-alcoholic, like root beer. More like a minty-flavored soda than anything. But I understand there is an alcoholic version as well.
Sorry I can't help with the directions. I used to buy it from a local brewery when we lived in NC.

Roxie, I found this article, which has recipes for non-alcoholic and alcoholic birch beer, plus a host of handy tips.

My dad used to make root beer when he was a teen...once it exploded all the bottles (glass, of course), so I guess temperature control is something to think about. (An old friend made mead in his Italian kitchen when we were neighbors...and the same thing happened. It was August and we did not have air conditioning. It took ALL day for the jars to finish exploding!)

I'd love to hear how this turns out.
