or what do YOU do when life seems crumby?

~Last week, dh wanted homemade lemon meringue pie for his birthday! It was much less expensive to buy an entire bag than by the pound, so I bit the bullet and bought the bag, trusting we'd find something to do with ALL those lemons! I started the pie making in a positive frame of mind, delighted that I had one ball of pie dough left in the freezer, hoping to have one shortcut in what seemed like such a lengthy process (considering I really didn't feel up to making the pie that day).....I burned the crust to a crisp while making the lemon filling!!! Taking a deep breath, and offering up my frustration, I made a new recipe of dough, doubling it, with the intention of freezing extras for the future (again....reminding myself, we're making lemonade out of lemons, here!!! The rest of the pie-making went well and the pie was one of the best I've ever made...we even had extra little Pyrex dessert dishes of lemon meringue for lunch, after doubling the filling and meringue recipes for twice the delight. Ds made homemade lemonade, of course...another of dh's favorites. We even saved all those rinds in a decorative bowl...they've been gracing our kitchen counter with a dash of sunshine...I pop 1 or 2 in the garbage disposal to freshen it now and then. A simple bag of lemons has brought such joy, even after its original purpose served us well.   

~Dovetailing with the idea of making lemonade when life sends lemons...not looking forward to making tuna casserole for tonight's dinner I was struck with inspiration while passing a crumpled bag of tomato basil potato chip crumbs, tucked in the corner of our snack box...voila! I fanned cheese slices into a lovely design atop the casserole, sprinkled the flavored crumbs atop, added dried parsley...a mundane dinner has taken on a whole new flair! Even when life seems crumby, we CAN turn it into something special!!!

I'd love to hear how others have used life's lemons or crumbs to inspire them to make life just a little sweeter or more pleasant for those around them.

Servant, we had a great experience along these lines at Christmas. My dh, four of the children, and I are currently living in a VERY small home temporarily with a very few of our kitchen things. My son, daughter-in-law, mother-in-law, two grandchildren, and two more of my older children ALL wanted to come visit us for Christmas! Wonderful, but we felt we had to get them hotel rooms, because where would they stay? Then I started to panic about WHAT I would feed them and WHERE they would even sit and IF we had enough dishes for everyone...so, we decided to take everyone out for Christmas dinner (actually the day after Christmas dinner).
God had other plans. It started to snow and snow and snow! We had 12". No one could get back to the hotel, so they all had to stay the night. Now, what to feed them?
I had a leftover roasted chicken that I had cooked for sandwiches, and that with a package of frozen peas, a white sauce, some mixed grated scraps of cheese from the deli drawer, and some biscuit mix topping made a delicious chicken pot pie. I couldn't believe it was enough for such a crowd, but it was and everyone loved it. We had a great "campout" and all the food was leftovers and "crumbs". Amazingly enough, we also somehow had enough food for breakfast and lunch, even though the frig is very small and I had not planned to serve everyone these meals at home. I have no idea how the food stretched...seemed to be a miracle. Maybe it was...one of those little miracles God sends us as a blessing and encouragement when we are willing to accept a large family from His hand.

Oh Caroline, I love your crumbs-of-the-loaves-and-fishes-Christmas-miracle!!! Isn't God SO gracious and good to provide ALL that we need, and then some?!? Just goes to show how we really don't need to fuss and fret nearly as much as we so often do in life, eh!? Thank you for sharing your absolutely beautiful story...I will try to etch it into this feeble memory for the next time life throws a curve in all our best laid plans! May the Lord always send you blessings and encouragement as you seek to accept whatever comes from His Holy Hand!
