Hi,
I've got just 3 chicken breasts in the freezer and I need to feed 3 teenagers and dh and I. What can I make with just 3 chicken breasts? I am not going to make it to the grocery store for another day or two...

Chicken salad - stretch with celery, onion, apple, walnuts. Serve on bread/rolls.
Chicken soup - again, load with vegetables and noodles/rice. Add a salad.
Chicken pot pie! Apple sauce on the side...
Chicken caesar salad. Saute breasts with spices, slice thinly, add to salad.

Put the breast in the crock pot with broth cook all day then shred. Then make pot pie and chicken salad or tacos. Add noodles and veggies to the broth for soup. Annie

Stuff with cream cheese/garlic/scallions. Bread and fry and bake, or poach.
Stir-fry with lots of veggies. Or something like this

You can cook it and chop it and add it to a gravy to serve over rice/noodles/bread/potatoes.. smaller pieces will help you find chicken in every bite.

Chicken cacciatore - cook it in pasta sauce (tomato - jar or homemade), preferably for an hour or so. You can jazz it up with sliced mushrooms, a bit of chopped bell pepper, a few sun-dried tomatoes, whatever you have on hand that adds a bit of veggieness. Add oregano, basil, either onion or garlic powder and parsley (all dried, or fresh, doesn't matter) to the sauce. (Fresh basil should go in just before serving.)
Serve over pasta. Insta-meal!

Chicken/pasta Alfredo is my teen's favorite. Cut up the chicken and brown it. (Season with salt and pepper.) Set it aside. In the same pan, make your Alfredo sauce. Stir the chicken back in, along with lots of cooked pasta.
For Alfredo sauce I just cook together 1 stick of butter and 1 8oz. pkg. of cream cheese, stirring until smooth (I use a whisk), then add a bit of milk until it is the righ consistancy. I add parmesan cheese if I have it.
Not a low fat dish, but it does fill everyone up. I serve it with salad or a cooked vegetable.
