Not too sure if still in print but my favourite is The Fit For Life Cookbook by Harvey and Marilyn Diamond. I used this book so much in the early years of my marriage that it has fallen apart

Reasons as to why fav - Vegan and raw food recipes. So many vegetarian recipes books rely heavily on dairy substitutes

Moosewood Restaurant Simple Suppers.
All of the Moosewood cookbooks are great, but Simple Suppers is the one I use most. Family-friendly, not full of dairy substitute or TVP. Not a lot of expensive or hard-to-find specialty items. Just natural and tasty food.

I have Feeding the Whole Family.

Although the cover says for babies, children, and their parents, it really is just a meat-less family cookbook (though I do believe it does have some fish as well).
