I'm trying the roasted cauliflower soup from Make it Fast, Cook it Slow and I am still thinking about an emergency backup soup for my kids, who dislike cauliflower. And bread.

This is the time of year every Irish dance mom dreads, so we are going for simple meals this week. Preferably ones that use up all the veggies in my fridge.

Nancy, actually I was wanting to make a soup from my cauliflower and cabbage in my fridge so if you like the one you make tonight I would love the recipe.

For us tonight, it is going to be leftover spinach and cheese stuffed shells and any other leftovers I find lurking in the fridge.

Well, Monday is Girl Scouts. For the past 2 months we have been having Chicken burritos on Monday nights. I am posting the recipe without being asked because this is the best recipe EVER:

Put 4-5 chicken breasts (thawed or frozen-it doesn't matter) in the bottom of a crockpot. Add 2 cans Rotel tomatoes (I use the Mexican flavor). Turn on and cook all day.

When I finish up the meeting I call my 12 yo son. He has the chicken shredded and the fixings out (tortillas, sour cream, black olives) by the time we get home.

Meatloaf, biscuits, and probably some carrots and peaches on the side--we're using up leftovers here in preparation for moving on Thursday. It's definitely a bit crazy here right now!

Leftovers: Steak and chicken fajitas with peppers, onion, and guacamole. My DH grilled everything in all the wonderful weather we are having. It works well because tonight is ballet night.

I'm wondering if there might be an alternative to the "Rotel tomatoes (I use the Mexican flavor)"...
I don't remember seeing them here in Canada!

Nique, rotel tomatoes are just a brand name of chopped canned tomatoes.. the mexican flavor ones have some green chile and some seasonings added to them. Typical mex. seasonings would be cumin, oregano, red pepper (if you don't use green chile), salt.

I've been wanting to make some.. I call it an "un-gumbo" because I only use a roux, no file or okra. But when dh and I are about the only ones to eat it.. it is a bit of work and then watch all the kids eat plain rice

Donna, you've probably already gotten started, but here's an option for you. I printed it out over the weekend to try this week or next. I'm thinking any sausage will do.

We're having burritos--chicken, rice, beans, cheese (it'll be make-your-own) with sour cream and salsa. Has anyone tried Costco's Kirkland brand organic salsa? It is SO yummy--as good or better than homemade!
