I had saved a link to a baked potato soup recipe that I found here a few years back. I've since had a computer die...as in "no cpr is working to revive the hard-drive"...so the recipe link is GONE.

HELP! HELP! I don't remember who did it. The search factor doesn't bring it up...well, it brings up 6 pages of recipes. I seem to think it was one of the Jenns' recipes, but I cannot remember for sure!

Help help help! I need to make it tonight, and I just realized that I didn't have it!

I make a YUMMY baked potato soup! You'll have to add the measurements based on preference, i can give estimates. And it is in no way low fat!

1/2 #bacon cut up fried
remove bacon and pour off most of the bacon fat, saving some in the pan to saute 1/2 onion finely chopped.

Add 1/2 of the bacon and all the onion plus a little dripping to a pot of chunked potatoes. Cover w/water, or ckn broth or both. Boil until tender.

Pour off as much water as you want...Add heavy cream (or 1/2 & 1/2 or even just milk) to make it as soupy as you like.

Add some sour cream, shredded cheese, sliced green onions and butter. Stir.

Serve in individual bowls garnished w/sour cream, shredded cheese, bacon pieces and green onions.

This is sooo good I told my husband to fill the bathtub so I could take a swim in it    Maybe I shouldn't have said that in front of the kids b/c now when I serve this to guests, someone will say, "Is this the soup you wanted daddy to fill the bathtub up with?"
