Can we talk dressings Gals ?
I would love some recipes for yummy dressings . We have people in our clan who like the oil vinegar type then those who prefer the creamy types so variety is most definately needed here . I have been thinking of buttermilk dressings , know any good ones ?
Thanks , Roxie

Thank you so much for asking this question, Rox! I'm working on lesson plans right now ...so I can't get up to get my recipes for you. I have 2 - an oil/vinaigrette and a creamy yogurt/dill dressing that I love. I'll share them in a bit! But, that's all I've got. I can't wait to follow along with this thread and get some new ideas!!!

i got my ranch and raspberry dressings from angie mc

ranch = mayo + garlic + onion (or use powders) + parsley + buttermilk or yogurt + salt and pepper

raspberry = raspberry preserves + red wine vinegar + olive oil + salt and pepper, sometimes i add pomegranate seeds

those two are the only ones my kids really like, besides plain vinaigrette

my fave is creamy caesar = olive oil, mayo (or use a raw egg yolk if you like), lemon juice, freshly grated parmesan, a bit of dijon mustard, salt and pepper, one mashed anchovy, garlic mashed to a paste

Found this blue cheese dressing at Our Best Bites

1 c. mayonnaise
1/2 c. crumbled blue cheese
1/2 tsp. Kosher salt
1/2 tsp. freshly ground black pepper
2 Tbsp. red wine vinegar
2 tsp. minced garlic (1-2 cloves)-I've also subbed garlic powder with fine results
A couple tablespoons of milk or buttermilk (optional but I usually add some)

Combine ingredients, cover and chill for at least an hour before serving.

I haven't tried any of their other dressings but this one is YUMMY!!

Never met a salad dressing I didn't like!
very mild viniagrette(a fave with my kids)
1/2 cup apple juice- boil until reduced by half
1/8 cup apple cider vinegar
1 tsp honey
salt and pepper
walnut oil(about 1/2 cup)
My favorite way to use this, combine everything but the oil with a bag of grated carrots and let marinate. Right before serving stir in some walnut oil, some raisins or dried cranberries and some chopped nuts. DELICIOUS carrot salad. Great on any salad, but really sings when combined with greens, chopped apple, nuts and,you guessed it- BACON.
Creamy avacado
-in a blender, combine a super ripe avacado, a clove of garlic, juice of two lemons, and about 1/2 cup of buttermilk.    Awesome with mexican meals, I tend to garnish this salad with toasted pumpkin seeds.
Cherry tomato viniagrette
Dice two pints of cherry tomatoes, stir in a clove of finely minced garlic and salt liberally. Let sit at least half an hour. Drizzle in olive oil (about half a cup) and toss (the tomato juice serves as the acid in the drsssing).   Pour over mixed greens OR leave out the lettuce, add cooked corn kernals, a diced avacado and finely diced red onion. OR minced fresh basil and some fresh mozzarella.
YUM! Mcchatty

Finally have a minute to post my only recipes for salad dressings. I'm writing notes on my recipe cards from those already shared!    Thanks gals!

Quote:
Vinaigrette (probably the same as most of you already do)

1/2 cup organic apple cider vinegar
1/2 cup water
1 package of the dry Italian dressing mix
1/4 cup olive oil

Shake vigorously!

Variation: I sometimes substitute a nice balsamic vinegar or red wine vinegar for a different vinaigrette. All are nice.

Quote:
Creamy Dill Dressing

32 ounces/1 large container plain yogurt (I use Stonyfield Farms or make my own)
2 tablespoons white wine vinegar
1/2 cup fresh dill - chopped
salt to taste

This makes a lot - you can adjust the amounts to make less, but we like to use this as a dip for fresh veggies/snacking as well so I always make a lot.

I have a blue cheese and Italian recipe. Both are from the LLL cookbook. This cookbook has 4 pages of salad dressing recipes. Granted - some things in the book are a bit too "healthy" tasting for our tastes but we have tried and really like these:

Italian Dressing

1 1/3 c oil
1/2 cup vinegar
1/4 cup grated cheese
2 t salt
1t onion salt
1/2 t pepper
1/2 t dry mustard
1/4 t paprika
1 clove garlic, minced

You can add in 4 slices of fried bacon fried and chopped and 1/3 c of green olives. We have never added these in so I don't know what it would do to the taste.

You do have to refrigerate several hours before using and shake it well each time.

My favorite is the Blue Cheese Dressing -

1 1/2 c plain yogurt
1/2 c crumbled bleu cheese
1/2 c mayo
1 T Parmesan cheese
1 t vinegar
1/8 t pepper

It has to be stored in refrig for several hours before serving. The cookbook has a bunch of optional things to add but we have never done those. I wanted my standard restaurant style bleu cheese and couldn't find any commercial brands that tasted right to me.

We have also tried the Honey French and 1000 Island dressing and while these were ok to us - they didn't taste like the commercial brands we were trying to imitate and were used to so they were tasty but not quite what we wanted or expected. (My dh favorite dressing is 1000 Island and this was fine but not like what he really likes)

For an easy- quick dressing, my aunt using mustard mixed with something (I think honey) but I'll have to ask her about that one. I just know it was two items I always have in my home, it took about 2 seconds and could be served instantly. It saved my skin when we were having someone over for dinner with salad as the main veggie and I somehow was out of every single dressing in the house and no ingredients for the ones I know how to make or not enough time to make them and have them ready to serve. I just wish I could remember what the other ingredient was - I'm thinking maybe honey. I never wrote it down (much to my dismay and peril) thinking it was so easy. Now I have to call her and get it again.

Our favorite is made in the sald dressing jar you buy at the grocery by the dry salad mixes.

We use Balsamic vinegar for the vinegar, flax oil for the olive oil, water and the dry italian seasoning mix. Whatever the measurement on the jar is what we use. We LOVE it!

1 tsp. Worcestershire sauce
2" anchovy paste, optional

Southwest Caesar Dressing
1 c mayo
1 tsp brown sugar
2 T soy sauce
3 T lemon juice
1/2 tsp cayenne pepper or chili powder
2 T grated parmesan cheese
salt and pepper, to taste

Greek Dressing
6T olive oil
1 tsp each of-
   garlic, minced
   oregano
   basil
   dijon mustard
   lemon juice
1 - 1 1/2 c red wine vinegar

Enjoy!

A good friend, who is on here, brought this to me after the birth of my second child. It is so very tasty!

Sesame Ginger Salad Dressing

In a blender or small food processor combine
2 cloves garlic
1" piece fresh ginger
2 Tbl tahini
2 Tbl lemon juice (or rice wine vinegar)
salt to taste
1 small carrot

Mix well in blender and then with blender running drizzle in enough olive oil to get desired consistency.
