I have a couple of yummy recipes that call for lemon zest. But, I don't like getting a bite of crunchy zest in a nice soft piece of cake. Is there a way to soften the zest?

Are you grating it fine enough? I use the finest setting on the grater (the one with the little holes) instead of a regular zester. It takes a little longer to get the teaspoon or two you need, but I have never had any "chunks" of lemon zest that need chewing!

Apparently, I'm not grating it fine enough. I used a zester and got pieces that are similar in size to shredded coconut. I think I will try the grater insted.

use shorter strokes too or once you use the zester, just mince it first.
