I am busy working away at my winter menu plans. Everyone is tired of the fall menu rotation which we have had since September My goals are to try and eat seasonally and lots of nutrient dense immune building foods. Also to increase our produce intake which is harder in the winter as salads are not so enjoyed. I thought I would share my initial plans (still working on google docs with the menu rotation and recipes/links)
Breakfasts
Eggs - scrambled, boiled, fried, omelette with Ezekial bread
Crockpot oatmeal with power smoothie
Cinnamon toast and hot chai latte
Jam toast with peppermint hot chocolate
Boxed flax cereal for busy mornings. OJ to drink
Homemade granola with yogurt
Homemade muffins - plan for bake and freeze day - choice of blueberry, morning glory, apple and carrot, pumpkin, banana. Serve with crockpot gingerbread latte (decaf)
Sardines on toast
Lunches
Immune buster chicken soup prepared in advance - serve with quick garlic toast
Quick nacho/salso/cheddar bake
Big salad - organic spring mix with olives, cucumber, raisins, croutons and diced chicken
Broccoli and bacon salad
Red taters and green grannies
Easy potato bake
black bean and rice skillet
Canned soup for busy days
potato garlic soup
Teatime (aim to move away from too much sugar/processed snacks)
popcorn with farm butter and salt or maple syrup
homemade crockpot cinnamon apple sauce
warm canned peaches with crumble topping
homemade yogurt and granola
yogurt cream and frozen blueberries
homemade granola bars
pound cake with frozen berries and melted vanilla icecream
Dinners - 3 week rotation to prepare)
Beef and pepper bake
Bounty Rice
Turkey barley soup
Immune busting lentil/rice casserole
Black bean sweet potato burritos
Crockpot chicken sweet potato curry
Crockpot taco soup
Homemade easy chicken pot pie
Beef stew
Taco Mac
Slow cooker chicken with rosemary, apples and onions
Cranberry beef roast
Rachel Rays spaghetti and meatballs
Marrakesh beef or lamb stew
Winter vegetable lasagne
Leek and lentil risotto
Hopping John with turkey bacon
Vegetable pasta bake
Balsamic chicken with caramelized onions
Ginger pumpkin soup with cheese sausage muffins
Slow cooker lasagne
Stirfried cabbage, rice and ground beef in tortillas
Crockpot chili (for football watching nights!)
Crockpot buffalo wings (for football watching nights!)

Looks good, Marilyn! So agree with you on those teatime/snacktimes!
One tip: I used Google calendar to automate my menu rotation.

I made a yummy soup just the other night.. it was beef and cabbage soup.. with lots of onion and garlic and carrots and a bit of potato in it.. hamburger was the beef. But it was very good and most of my kids liked it (with 8, "most" is pretty good)
The kids don't care for beef stew and thinking about it I decided to drop the tomato and this is what I came up with. I have a couple of kids that don't like hardly anything that is mixed up like soups or casseroles (there are a couple of exceptions) but the rest did like it alot.

...not to be persnickity.......but shouldn't it be immune-enhancer? or virus-buster? you don't really want to bust your immunity...

Um - my dd 13 said exactly the same thing!! I told her rather stiffly that it is MY name for our very potent and kill all germs chicken soup
BTW - you should taste my immune buster garlicky pasta - not for the faint of heart!!!
I will come back later re the recipes - am trying to brace myself to get out in the FREEZING weather to actually grocery shop for my menu plans

OK Laura - I finally have 2 minutes
Here is the link to the rosemary crockpot chicken recipe
My lentil rice casserole is not an exact science - I use red lentils, barley, rice, leeks, rosemary, thyme, sweet potatoes and boil it up to a stew - add pepper and salt. The children love it.
