Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

I'm reading this and saying to myself "spring meals? It's practically winter here!", and then I remembered you are in a different hemisphere!

I always grill the first chance I get!

This is SO.HARD.TO.DO...all I can think of are roasted vegetables, fried turkeys, and pecan pie!

:: lots of cool pasta salads with variations depending on whatever is in season - fresh corn, bell peppers, red peppers, peas, beans, tomatoes, dill, basil, and so many more...i love working with flavor combinations on this. i use either a red wine and olive oil vinaigrette for dressing or a yogurt, dill, vinegar dressing and always have...pasta and some kind of bean/legume for protein.
:: we grill a lot as well
:: fresh pestos and bruschetta lives in the fridge and I put it on pasta with chicken or plain pasta or toasted bread...yum!

alright...that's as far as I can stretch for now, Anne...back to dreaming of hot chocolate and warm, toasty fires. i'll come back later if i can break out of thanksgiving mode.
