I'm having some difficulty getting the results I would like with my cookies. My DH bought me a couple of new shiny aluminum pans because I was bemoaning my old pans' being too thin and not big enough. So, he bought the aluminum jelly roll sheets. I really love them - they have a high enough wall that I can make a big batch of granola and it comes out with just the right crunch. However, my cookies come out undercooked and won't brown. I'm afraid to cook them too long for fear they'll burn on the bottom. Can anyone offer some "rules of thumb" for perfect cookies with these pans?

Dark pans cook things quicker. When I use a dark and a shiny one in the same oven, the dark pan needs to come out first by about 2-4minuts.So if your old pans were dark, you may need to increase your cooking time for the shiny ones. Also, the higher the pan is in the oven, the better they will brown because the heat reflects off of the oven's ceiling, and the less the bottoms will burn because of being further from the heating elements. That's my theory anyway !
