I have about 2 lbs of shredded chicken left over from the weekend. I need some original, yet simple, ideas for using it. We are burrito/taco/fajita'd out!

make chicken noodle soup?
use it as a topping on mac and cheese?
make a gravy (white sauce with flavor) to stir it into and serve over slices of bread or biscuits or rice?

chicken pot pie?
bbq chicken sandwiches?
wraps--add balsamic dressing, baby spinach and mozzarella and wrap in a spinach wrap
pasta salad--add bacon and avocado too!
fried rice

We love chicken tetrazzini on a fall day...I use the recipe from the Once A Month Cookbook. Here's a link to the recipe.

barbecue. kinda like pulled pork, but chicken
use any barbecue sauce, or
combination of
ketchup
soy sauce
cayenne or Tabasco
brown sugar
worcestershire sauce
mustard
serve on rice or in buns.
chicken-macaroni salad:
shredded chicken
mayo or vegenaise
minced shallots
minced carrots
sweet pickle relish
salt and pepper
diced cheddar
pineapple tidbits

yup, heat it up for a while until nice and thick. i forgot -- i either add minced garlic and onion also, or onion and garlic powder, depending on time/mood.
oooh, and we add a slice of cheddar on top of the barbecued chicken and melt it under the broiler. double yum.
