Tomorrow is World Bread Day!

I'm going to use this day to expand my girls repertoire of recipes for the bread machine. 8yo-rye. 6yo-wheat

And, we'll just have bread for breakfast, lunch and dinner!

::Cranberry-lemon for breakfast
::Rye for lunch
::Maybe a Nutty Wheat for Dinner

And, I'm making it my personal goal to GET MY CRAZY ORDER in from King Arthur's Flour ....I mean....REALLY! How much TIME can I possibly spend thinking about yeast, lecithin, and ascorbic acid??????

get a grinder and buy the wheat berries and grind your own flour.. hard white wheat flour and you don't have to think about even that many things.. it has a nice high gluten content and breads can be whole wheat and made nice and soft and fluffy without lots of additives. We like the nutty flavor of red hard wheat so I mix mine half and half.

But I found you dont' need to add much for wonderful bread when you use fresh ground flour.

What I need is a new mixer.. but that won't be for a while.. not when the one you want is about $600

I do cranberry and orange together.. is it a yeast bread or scone or other quick bread? I usually do cranberry orange scones.

I grind my own wheat and I still fritter away over the joys of King Arthur's Flour! I do this EVERY Fall...possibly because I love autumn baking and there are so many neat baking items there!

when I make rye bread.. I'm not necessarily making a dark rye bread.. just using rye flour with regular flour in my regular bread recipe.. i slip some caraway into the rye before I grind it so that it gets that good caraway flavor throughout (which is often what is thought of as the rye flavor).

I find it locally. We love rye for the weekends for grilled sandwiches!!!!

Here's the Light Rye 2 lb. recipe I use for the machine:
1.5 cup water
2 T. Oil
2.5 c. flour
1.5 c. rye flour
3 T. br sugar
2 T. caraway
2 t. salt
1 T. SAF yeast
1 T. gluten

And, I LOVE this Bohemian Black Bread (2 lb):
1.5 c water
4 T. melted butter, oil, bacon grease
2 T. molasses
2 1/3 c. flour
1 1/3 c. med. or dark rye flour
1/2 c. wheat bran
3 T. unsweetened cocoa powder
1 T. gluten
2 t. instant espresso powder
3 t. caraway
1 t. fennel
2 t. salt
2.5 t. SAF yeast

And, I'm dying to try a recipe I found for Polish Beer Rye Bread...it uses beer and apple cider vinegar.

That's what I meant...cranberry and orange.

I just made this quick bread for breakfast tomorrow that turned out SOOOOOO good!!!!!!!

Dried Cranberry Tea Bread
1 c. dried cranberries (soaked in boiling water, drained)
2 large eggs
2 t. almond extract
1 t. vanilla
1/4 c. oil
3/4 c. apple or orange juice concentrate
3/4 c. sugar
1 1/4 c. flour
1 c. pastry flour
1 T. baking powder
1/2 t. baking soda
1 t. cinnamon
1/2 t. nutmeg
1/2 t. salt

***I was talking with my older two girls tonight about the breads on the agenda for tomorrow and showing them that Bread website. So.....my sister calls. DD-8 gets on the phone with her and says, "So, Auntie Senta.....what are YOU going to make tomorrow for World Bread Day?"

And, OF COURSE, her response is understandably "World WHAAAAT?"
