My in-laws are coming this weekend, and I need quick and easy breakfast casserole to prep. Does anyone have any good recipes?
I prefer egg type ones, but I'll definitely make note of other types for future reference.

Fwiw, I made the feta and mushroom casserole for dinner Monday night. We couldn't really taste the feta - I'll add more next time.

Super easy:
Sausage Pie
13x9 pan
scramble and cook a dozen eggs
separate pan, cook 2 lbs of sausage
put eggs in 13x9 dish
put cooked sausage on top
cover with cheese, maybe 2 cups
cover with a roll of crescents (the Pillsbury Dough type) unroll each crescent to cover
Cook in 350 oven for 20-25 minutes til rolls are slightly brown. Serve, big favorite here, can do 2 lbs of bacon instead or use a homemade biscuit recipe.

Oh!!! I have a favorite!!! Marilyn shared the recipe with me after the birth of my last daughter to help inspire my menu plans! It has earned a permanent place on our menus because we all love it!!! I have modified it a wee bit.
Marilyn's Breakfast Casserole
** 1 can of biscuits baked and cut in half --I use my home baked whole wheat bread sliced in 3/4 inch slices (~ 4-5 slices) instead of the biscuits
** 1 medium onion - saute' in olive oil
** 1 pound of sausage - browned
Butter or grease a 9x13 baking dish. Layer the bread or biscuits on the bottom of the dish. Butter the tops of the bread. Evenly sprinkle the sausage and onions on the buttered bread. Combine the following in a bowl:
** 9-10 eggs
** 1 1/2 cups whole milk -- sometimes I use Pet Milk (condensed milk)
** chives, salt, and pepper to taste
Beat egg/milk mixture and then pour over the sausage/onions. Top with about 2 cups of cheddar cheese and bake for 30 minutes at 350.

ummm..do you mean evaporated milk? Condensed milk is the sweet stuff...

I like taking a bag of frozen hashbrowns (the loose ones, either shredded or diced) putting those in a 9x13 pyrex.. topping with browned breakfast sausage (the kind you get in rolls and can brown like hamburger) then scramble about 18 eggs with milk and salt and pepper and pouring over the whole thing.. bake at 350* until the eggs are set, cover with shredded cheese and put back in the oven until the cheese melts (couple of minutes) serve with toast.

Here's my favorite- super super easy.
Spray a 9x13 pan.
Break a dozen eggs into it and whisk.
Add 1/2 lb cheddar and 1/2 lb jack cheese.
Add whatever you want (I ususally add 2 cans of drained green chiles and a box of sliced mushrooms, but you can add cooked sausage or cooked bacon if you want some meat).
Cook at 325 for 30 minutes.
Comes out perfect every time.

Thanks ladies. We had a very nice visit with my in laws..
I ended up using a slightly modified version of one of the ones listed here, with sausage, potatoes and eggs. It came out great! I'm looking forward to trying the others sometime in the near future. I love experimenting with this kind of thing to find just the right one for a special holiday, etc.
