polenta for us. i might make some mushroom ragu for it or something. we're all tired of chicken, but i think our bodies need it -- chicken soup, that is. so i'm still thinking.

hmm, in the philippines we call that "arroz a la cubana", and serve it with a fried egg, for breakfast. Yum! I am craving plantains now.

Chicken and dumpling soup with plenty of garlic, lemon, and spinach. I am teaching dd to do stock today and we have sick kiddos here...

Tonight is homemade baking powder biscuits, black bean soup and a salad made with mixed green with homemade ranch dressing.
And YUM to the maduros! When I was in grad school there was a Cuban restaurant in town and I LOVED the fried maduros. I also have a friend from Venezuela and we would make them when we had arepas with black beans, cotija, and queso fresco...YUM!

Even though he's Italian, my dad was born and spent his childhood in Venezuela, and he remembers eating maduros and arepas every day for lunch--wonderful food memories for him!

It is our anniversary today so we are headed to Texas Land and Cattle for some steak. My children will be coming along as will my MIL and her husband (they are in town visiting).

Haha! That would be rice a la ME! Since I'm "la cubana"
And BTW only two of my kids like the maduros so I have to make corn too!

We're having eggs and sausage. I was going to make pork chops but don't feel good today and want eggs. So that's what's for supper!
