Since store-bought eggs are so inexpensive right now, there hasn't been much of a demand for our farm fresh eggs. I have 16 dozen chicken eggs (and another 3 dozen duck eggs since they've started laying) in my refrigerator. There also haven't been any funerals or potluck meals lately, so I haven't had a good reason to make up a couple dozen deviled eggs, either.
I've been freezing some, individually, for winter (and have 3 dozen bagged already). I've also been hard-boiling them for egg salad and potato salad, but they've lost their appeal as a quick snack.
Besides eating them 'plain' (fried, scrambled, omelette / fritatta) can anyone give me a tried and true breakfast casserole recipe that uses them up?
I've done the overnight french toast casserole and made a few puffy oven pancakes...maybe there is a favorite egg custard recipe - other dessert ideas that call for a lot of eggs? How about a quiche recipe that is a favorite in your house? Other ideas?

for breakfast I like putting hash browns (either cooked or frozen from the bag, not raw potatoes) into a 9x13 and then putting some sort of meat on top of those.. like a pound (or even as little as half a pound) of breakfast sausage browned.. then cover with a dozen eggs scrambled and bake.. when it's cooked top with cheese and return to over until cheese melts.

i love breakfast stratas (we don't eat them much anymore since family has dairy and egg allergies, but i used to prepare them often)
they're basically quiches, you can vary the fillings to include veggies, grains, bread cubes, whatever you like, really -- ham and cheese is one basic

oh and on the freezing.. also do meal sized bags.. then you can just grab one bag and have scrambled eggs for breakfast for instance (or the above casserole or such)

ooooh, I like the poundcake idea. We have several dozen eggs sitting in the refrig right now.
Stephanie, your search reminded me of 36 eggs in 36 hrs. The baked oatmeal and egg bread recipes use a lot of eggs.

How about angel food cake with the whites and egg noodles with the yolks? You can freeze both!

i forgot! here's one my dh's favorite egg desserts:
Brazo de Mercedes -- it uses 10 eggs
and leche flan is the one i prepare for him once a year, on his birthday (my recipe is a bit different, but you should get good results with this). with the egg whites, i make macarons -- don't ask me how to make them perfectly though, i haven't figured out how yet.

After storing enough for baking and fritattas you could cook them up and feed them to your hens to reduce feed costs.

Uh-oh, Michaela...another blog to add to my list. Great ideas, there. I'm definitely going to make up a batch of that baked oatmeal, some more zucchini bread, and will try the egg bread, too (wish she had a link for that buttermilk pineapple pie...)
Poundcake - I have never made poundcake. (Can you believe it?) That's why I need you all for these great ideas and inspiration to try something new!
stef - thanks for all those links. I was hoping you'd have some great 'foodie' ideas, especially for desserts.
I didn't think about egg noodles, either (thanks, Angi) - our neighbors insist that egg noodles made from duck eggs are the best - so I'll probably give that a shot, too.

How about lemon curd with the yolks? We LOVE lemon curd on scones around here (and just plain on spoons ).
Plus, I would think it is something you could make a lot of and put in small canning jars hot and they would keep for some time (in the fridge) if you managed not to eat it all.

Challah bread uses a lot of eggs too, and you could always throw in an extra. I love eggs! I wish I could take some of those eggs off your hands.

And I'm wondering, how does one freeze eggs? I assume they're out of the shell?

scrambled eggs freeze just fine Noreen.. not sure if you could freeze them not scrambled for thawing and frying or such.. but I'll scramble eggs for a camping trip.. in bags as meals.. and then freeze them.. they'll help keep things as cold as possible and transport so much easier

I use a muffin/cupcake pan to freeze eggs (scrambled or not) crack eggs into the tin - once frozen I put all of them into a large ziplock freezer bag. Then I can just pull out the number of eggs I need for a recipe.

oh that's nice to know Michaela.. hmmm can you cook them as fried eggs? or does the freezing process break them down too much to keep the yolk and white seperate?
