Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

We're having leftovers, plus some pre-made mushroom and chicken pasta from Costco. I had cold-poached chicken breasts with tuna sauce on the menu, but forgot to take the chicken out of the freezer.

What are you cooking?

not sure.. we're recovering from a tummy bug.. it's short lived.. got 2 that haven't had it yet.. one that's in the midst, I'm just on the tail end and just tried eating a bit. And several that are over it.

But I have leftovers that need using today and tomorrow.. so that I'm ready again for making company meals

I'm having such an easy week in the kitchen. Tonight's a birthday party for my nephew, so no cooking for me!

I've got an easy night too...my mother in law's birthday is today and they're coming over for dinner tonight. She requested take-out BBQ sandwiches with all the fixins!!!! Talk about a birthday present for me!!! I don't have to cook!!!!

But...I'm in a slump with my menus and cooking...I guess it's a late summer slump. I have resolved to dedicate some time to freshening my menu choices this week and weekend! I'm bored with my old summer menu...I need something that will take me into fall where I shall swoon with possibility!    Does anyone else just LOVE cooking in the fall????

I should get up from the computer and actually go start supper! Tonight I'm making garlic pasta; throwing in broccoli and grilling chicken breast.

Meatloaf, spinach with garlic, cornbread, a green salad, and melon for dessert.

I am very curious about this, what is cold-poached chicken?

I'm making meatloaf too, however, I'm sort of scared! It's my first time!
Also making baked sweet potatoes, salad, and rolls. I'll probably toss in some diced cantaloupe too, it was on sale and is a favorite around here!

Celeste, our dinners are almost identical!

Jennifer, I LOVE cooking in the fall! There is nothing like the sounds of my children playing, football on, and the smell of tortilla soup in the house!

Well, mine is from my latest freezer-cooking stash, so it just needs to bake and serve--I love make-ahead dinners!

And your menu sounds like quite a meal for someone who's waiting on a baby any day (or minute!) now!
