My family has been given a lot of potatoes (they're small, but many)and I need recipe ideas, we can only eat so many mashed potatoes.

My favorite potato recipe is super simple.
Slice your potatoes or just quarter them if they are small. Sometimes small ones I just cut into 2 pieces...
Put a packet of onion soup mix and some olive oil into a gallon ziplock baggie. (I think the recipe calls for 2-3 Tablespoons of oil, I just dump it in there til it looks like enough to coat my potatoes.)
Add potatoes and mix thoroughly. Then bake/broil at 450 for 30 minutes in a baking dish.
YUM!!

This is our favorite way to have potatoes. So incredibly yummy and it makes your house smell delish!
Beth
Greek potatoes
6 md Potatoes, cubed
1/2 c Fresh lemon juice
1/3 c Vegetable oil
1 tb Olive oil
2 ts Salt
1/2 ts Black pepper
1 1/2 ts Dried oregano
2 Gralic cloves, pressed
3 c Hot water
Chopped fresh parsley
INSTRUCTIONS
Toss potatoes with lemon juice, oils, spices & garlic in a deep flat pan. Add water. Bake uncovered for 1 1/2 hours at 475F. Stir every 20 minutes. Add more water if necessary. Allow the potatoes to evaporate the water during the last 20 minutes till only the oil is left. Garnish with parsley & serve. "New Recipes From Moosewood Restaurant"

My favorite two meals have been:
Rosemary Roasted Onion Potato
cube potatoes and onion and toss with olive oil, rosemary, garlic, salt & pepper to taste. Bake at 450 for 20 min. In the summer I add roasted veggies like Zucchini.
Breakfast Skillet
Sausage, onion, potato cooked until done; add a few beaten eggs, bell pepper and cheese.
There are a lot of breakfast casserole recipes that use potato...we're not huge fans, but see a lot of them at our yearly church potluck breakfast.
I've been craving Greek food, though...Beth's recipe may be a new favorite! My dh loves ranch, so I'll have to try Candace's, too.

My FIL gave us a huge sack of potatoes one year - our favorite -
potato pancakes!
With a little sausage, applesauce, sour cream - yum! yum!
And another favorite that my dd likes to make is potato leek soup.

My favorite for this summer has been grilled potato packets.
thinly slice white and sweet potatoes and onions, toss with olive oil, rosemary, kosher salt and pepper. Put them in aluminum foil packets and grill for about 10 minutes until crispy.

Potato gratin (freezable)
Slice your potatoes, peel if so inclined. Honestly, I just eyeball it, I use a 9" round ceramic dish that is about 6" deep. so, I use probably a couple of pounds of spuds. Here's the wierd part. Put your sliced potatoes in a big pot,just cover with milk(whole is best, but whatever is ok) add about 6 cloves of garlic- peeled and whacked with the side of a knife and a good pinch of salt. Simmer until your potatoes are soft.
Meanwhile, on the other side of the stove top.... Brownup whatever else you want to layer with the taters. Italian sausage? Cubes of ham? Bacon and onions? Leeks and zuchini? One leftover pork chop? A spoonful of spinach? A dollop of mixed veggies? Almost anything works. Spray your gratin pan with cooking spray- generously. Using a slotted spoon, make a layer of potatoes, add a layer of your other stuff, add a layer of any cheese you'd like(optional). keep going until your pan is nearly full. Pour your leftover cooking milk back over the ingredients in the pan. Top with cheese. Bake at 375* (really whatever temp you are using for anything else you are cooking at the same time will work for this, it's a very casual kind of thing...)
Our favorite combos-
Italian sausage, carmelized onions, sun dried tomatoes and mozzarella and parmesan
Bacon, onions, zuchinni and cheddar
Leeks, squashes, a little sour cream stirred into the milk(post boiling the potatoes in it) and fresh dill
sliced cubanelle peppers sauteed, a touch of chipotle sauce and monterey jack
Leftovers, sauteed in a bit of butter are the most fantastic lunch ever!
