Snickerdoodles

Preheat oven to 400*

mix together thoroughly

1 c shortening
1 1/2 cup sugar
2 eggs

sift together and mix in

2 3/4 c flour
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt


roll dough into balls the size of small walnuts

roll in a mixture of 2 Tbsp sugar and 2tsp cinnamon

bake 8-10 minutes until lightly brown but still soft

These are only lightly sweet and would be very good with a hot drink (coffee, tea, cider or hot cocoa) because they're not too sweet to go with a sweet drink.


Butter Horn Cookies

2 c. flour
1 t. baking pwd
1/4 t salt
1/2 c butter
1/2 pkg active dry yeast (1 1/2 t)
2 T warm water
2 eggs, separated
1/4 c sour cream
1/2 t vanilla
1/2 c granulated sugar
1/2 c finely ground walnuts or pecans
1/2 t almond extract
confectioners' sugar

Stir flour, baking pwd and salt together in mixing bowl. Cut in butter. Dissolve yeast in water; stir in egg yolks, sour cream and vanilla. Blend into flour mixture. Refrigerate 1 hr.

Heat oven to 400* F. Beat egg whites until foamy; gradually add sugar; beat until stiff. Fold in nuts and almond extract. Divide dough into 4 parts. Roll each part into a 9" circle on board sprinkled with confectioners' sugar. Cut each circle in 12 wedges. Spread 1 heaping t. meringue on each. Roll, beginning at wide end. Bake on a lightly greased baking sheet 10-12 min. or until golden brown. sprinkle with confectioners' sugar. Makes 4 dox. cookies.

Not exactly a cookie but oh so yummy

NUT CUPS

1/2 cup butter or margarine
3 oz cream cheese
1 cup flour

blend above ingredients until mixture holds together. This is the dough.

3/4 cup brown sugar
3/4 cup ground (finely chopped) nuts (we use walnuts or pecans)
1 tblsp melted butter
dash of salt
1 tsp vanilla
1 egg

mix above ingredients for filling

roll dough into small balls, about as round as a quarter. Using your thumb or finger, spread each dough ball onto the bottoma nd sides of the mini muffin pan cups (cups approx 1.5 inches across) Fill each cup with the filling leaving a bit of room for it to rise. Bake at 350* for 10 minutes, lower temp to 250* and continue baking for 15 minutes. Cool. Dust the tops with powdered sugar.

makes approx. 24
