Help.
My dh loves cucumbers and a colleague of his has (of course) way more than she can eat by herself. So far dh has brought home ten cucumbers. I made some into cucumber salad (with cider vinegar) and gave one away. Six are left and I just know more will arrive today.
So, who has good cucumber recipes?
Dh hates mayonnaise, but any other ingredients are okay.
Thanks!

Nancy, I had a friend who liked to spread cream cheese on cucumber slices. I'll bet flavoring the cream cheese, with garlic and/or other spices would be good too.
I've also served cucumbers with sliced tomatoes and salad dressing - any type.
Enjoy!

If you can handle sweet, you might enjoy Bread and Butter Cucumbers (odd name - no butter in recipe) . We gave away several jars, and everyone else enjoyed them.....we weren't too keen on sweet though.

Cream cheese, cucumber and tomato on sourdough bread is one of my favorite sandwiches. MMMMMMMmmm.
Also, I sometimes cut cucumbers into spears and dip them in a homemade sour cream dip made with garlic pepper and dill.
My girls eat them by the slice for a vegetable at dinner. It's one of the few veggies they will eat.
I hope that is some help?

We just had cucumber sandwiches for lunch the other day, but without the tomato...they're not quite ripe, yet. While yummy, I was thinking that they probably weren't exactly packed with nutrition!
My husband likes them marinated, thinly sliced, with onion in a mixture of equal parts water & vinegar + salt and a bit of white sugar + pepper. I like this salad with the addition of sour cream. I should go make some, now! (One year we had an abundance of cucumbers and froze several containers of cucumber salad. They were good.)
Oh yes - we have also made raita with it to eat with an Indian meal - especially if we're baking some naan or kulcha.

We like to chop them up with lots of feta cheese and drizzle with olive oil and maybe balsamic with a few kalmatas.
i second the cream cheese -try on a bagel with pepperoni!

Oh, Nancy, another idea - cucumber soup! It's cold, typically made with yogurt (although I just a recipe online that includes avocado ). Great for those unbearable stick-to-your-chair summer days on the east coast!

Boursin cheese makes a nice cucumber sandwich.
Homemade lacto fermented pickles are super easy and super tasty. You could probably also find a recipe for "refrigerator" pickles. Neither of these require cooking vinegar, etc... like a lot of pickle recipes do.
