This summer dd14 and ds11 are each taking a night to plan, make a shopping list and cook dinner. Tonight dd14 is making Fettucine Alfredo from one of Emeril's cookbooks for kids. She'll make a salad and side veggie also, though she doesn't know that yet.
My db (dear brother) is flying back to Afghanistan today and has a long layover in our area, so he'll be joining us for dinner.
What will be on your table tonight??

Yummy leftovers from last night - we had a cookout and my mom brought over great salads, etc. It was enough food for two nights, easy. So yay I don't really have to cook tonight.

Amy, we're doing something similar. I'm grilling hamburgers, but serving all the leftover salads I had last night: fruit salad, broccoli salad, and potato salad.

We took dh out yesterday. So today we are having grilled pepper steaks, mashed potatoes, tossed green salad, a veggie, coleslaw, and guacamole with chips. I hope that the weather stays nice so we can eat outside!

Orange-rosemary grilled pork tenderloin, packet potatoes (sliced regular and sweet potatoes and sliced onions tossed in olive oil with rosemary, salt and pepper wrapped in foil and grilled), broccoli.

I have some leftover turkey roast that I want to find a creative way to use. It's already been cut into thick slices and cooked. Any ideas? (Casseroles don't fly well over here.)

fried rice.. I have leftover rice to use and chopped cooked ham in the freezer.. and I'm sure I can find other things to toss in.
oh umm.. well maybe.. it'll be interesting.. I have to be at the pool (pool parent for swim team) from 4:45 to 6 and dh has his fire meeting from 6-9ish that makes dinner.. umm.. complicated to say the least.. maybe I'll save the fried rice for tomorrow and do more of a leftovers, sandwiches, whatever you can manage dinner tonight

ok dh came home for lunch and we talked about it.. and he'll have leftovers from last night before he goes to his meeting and I'll feed everyone omelets when i get home.. this is the only monday that's this hectic.. next monday he doesn't have a meeting.. and then after that he'll be on the alternate schedule for fire season and won't be home Monday nights anyway.

We're having grilled chicken Italian sausages served with marinara sauce on Italian rolls. I'll probably serve a green salad or fruit salad along with it.

Coming in late here, but I had a few turkey thoughts..
Make turkey soup (freeze it - if you really didn't want turkey again right now).
Turkey nachos (instead of chicken nachos)
My favorite is to take the leftover roast turkey, chop it, and put it in (the Moosewood Cookbook recipe) quiche with cheese (swiss or cheddar), a carmelized shallot or two and fresh thyme. It is really yummy!
Another thought is Rachael Ray often does shows after Thanksgiving using leftover turkey in different ways.
I typed leftover turkey in the food network search box and came up with these results.

As for our own dinner tonight, I can offer no inspiration. We had leftovers of various sorts.
