I have begun to use the Amish butter 2 lb rolls. We love it, so yummy!

I have a baking question. How do you measure out tablespoons and cups with this butter? I'm so use to the paper wrapped sticks with the markings on the sides.

You can either squish the butter into a measuring cup and scrape it all out with a knife.

Or, this is useful for larger quantities, fill a liquid measuring cup with 1 cup of water and add the butter to it until you have the quantity you need (it will measure as the amount you need plus one cup). Since butter and water don't mix, you'll be able to pour off the water and have the amount of butter that you want.

Or, there is my time honoured method of simply "guesstimating".

Oh! How blindingly obvious is that?! And I've never come across it! (And I'm in Australia where the whole sticks and whatsits of butter doesn't get used, it's all tablespoons and cups—or weights.)

Having just started using these rolls also, does anyone know where you can find molds like the rectangular butter you buy normally?
I have been using a tupperware type container, putting in the softened butter, cooling it, and cutting the butter into long rectangles but I would love to have it fit in my butter dish better.
