Anyone else up for Cinco de Mayo? That's what we are going to celebrate today with chicken enchiladas and refried beans.
I've always liked Cinco de Mayo as it gives me an excuse to make Mexican food (though I don't really need one...). We used to have a big potluck party with friends. The past week has been full of learning about Mexican culture and history. This weekend we attended a play put on the by the seminarians here - it was on the life of Blessed Miguel Pro. Along thos same lines, dd did her Catholic History Fair display last week on the Mexican martyrs of the 20th century (which included Pro).

tacos I think.. big plus is that they're quick so that I can have them made a resonable time after getting home from lacrosse about 6:15

Pork chops here...but now that you've reminded me that it is Cinqo de Mayo, I think I will cook it with adobo seasoning and serve it with black beans and rice!

Chicken parmesan, we totally forgot the date and it was too late to change plans! Funny, because any other week we eat Mexican at least once or twice.

We had Mexican food five days in a row last week and so I am making pasta e fagioli soup...time to add the beans!

Just by way of an add on...
The dinner that I made last nightended up being really delicious...so I thought I would share the recipe that I sort of made up on the fly.
I cooked the pork chops on the stove top in a large frying pan. First, I put the leftover coffee from breakfast in the bottom of the pan. Then I put the pork chops in and seasoned them with black pepper, onion powder, adodo seasoning, and ground annatto (a mild red pepper powder). I turned the pork chops frequently, and as the sauce cooked down, it coated the pork chops nicely. At the end of the cooking, I removed the pork chops and deglazed the pan with a bit of red wine and then poured the thickened sauce over the pork chops.
While they were cooking, in a small sauce pan, I combined one can of black beans, one can of white cannelini beans, one can of mild green chilis and 1/2 tsp of adobo seasoning. I did not drain that beans and chilis before combining, but rather used the liquid and the beans as a "gravy" to go over the rice.
I also made some jasmine rice, with salt and butter.
