I know some on this list are gluten or wheat free. We made a gluten free gingerbread house last week and it turned out so well! It was much easier than I thought it would be and the kids had a great time. Here's the Gingerbread Recipe we used:

Gingerbread Men

1 3/4 C gf flour mix
½ to ¾ tsp ginger
½ tsp cream of tartar
1/8 tsp salt
½ tsp baking soda
½ C butter (1 stick)
1 ½ tsp xanthan gum
½ C brown sugar
1/8 tsp ground cloves
1 egg
1/4 to 3/8 tsp cinnamon
½ tsp molasses (I use more to taste)

Combine flour, cream of tartar, baking soda, xanthan gum, cloves, cinnamon, ginger and salt. Mix well. Cut in the butter until the mixture is in crumbs the size of peas.

In a small bowl, beat the sugar, egg and molasses together. Add this mixture to the dry mix and mix until the dough pulls away from the sides. Form the dough into a ball shape and refrigerate for about 45 min. to an hour. If the dough is really hard when you take it out, just keep working it and add a tiny bit of water.

Dust some freezer paper (I like to use parchment paper) with flour or powdered sugar. Roll out the dough on the paper to about ¼ inch thickness. Cut in shapes as desired. Bake at 350 for 12 minutes. Cool on wire rack.

For those of you with a cookie press, here's a tried and true gluten free spritz cookie recipe:

2/3 C sugar
1 C butter
1 egg
2 tsp vanilla
2 1/4 C gluten free flour
2 tsp xanthan gum
1/2 tsp salt

Preheat oven to 400. In large mixer bowl, beat sugar and butter. Add egg and vanilla and beat well. In separate bowl combine flour, xanthan gum, and salt. Add to sugar mixture. Beat on low speed, scraping bowl often until dough is well-mixed. Place dough in cookie press. Form desired shapes 1 inch apart on ungreased cookie sheet. Bake for 6-8 minutes or until edges are lightly browned.
