Today I went gung ho (for me) with baking. 7 loaves of bread, a dozen bagels and a batch of buns. My brown bread was rising so wonderfully this morning. Now it's in the loaf pan, and everything, even the white dough, seems to be so slow with the rising. I did punch the dough down probably at least 3 or 4 times. For some reason I was under the impression that the more you punch it down and let it rise again, the fluffier your bread would be. Is that incorrect?

How do you make uniformly sized buns? Practice or some kind of round cutter?

My brown bread got to a whopping 2" tall. It is not nice and fluffy. One white loaf turned out not too bad, the others are a little small. What am I doing wrong?

probably over rising.. just punch them down once and shape then let rise.
